With their rigorous climate marked by a distinct seasonal cycle, northern territories are gifted with unique fauna and flora adapted to their extreme reality: game, fresh water fish, wild fruit, forest mushrooms, lichen… inspired by these unique elements, a rising number of chefs are exploring this once neglected exceptional culinary legacy.
In Quebec, Jean-Luc Boulay and Arnaud Marchand, supported by a passionate team, have been standing up to the challenge of inventing quebec inspired northern cuisine since 2012. Connecting the abundant proximity of boreal forests and the exceptional quality of local products, they salvage amidst french techniques to favour a true encounter of flavours. Recently took a visit following a recommendation from an employee at our hotel. Surprisingly, despite its location on a bustling street in a tourist-heavy area, it wasn't overrun with tourists. The menu was quite limited, featuring only six entrées. Yet it turned out to be one of the best brunch experiences I've had in a long time. Our brunch experience here felt akin to a mini-course menu. It started with a complimentary cranberry-apple juice & included a'bowl' of latte with our entrée. Each dish we ordered was flawless, & the Foie Gras Terrine, Le Pêcheur, & La Randonnée were our favorites. The Foie Gras Terrine was as smooth & creamy as one could hope for, & its combination with sweet garnish flavored with Maple eau-de-vie, a touch of salt, & perfectly toasted brioche bread was simply divine. Le Pêcheur, with its piquant Gribiche sauce, offered a rich & indulgent flavor profile. La Randonnée, spiked with fresh apples & crowned with hay whipped cream, stood out as one of the best French Toasts I've ever had. Its moist, soft texture, coupled with a generous sprinkle of homemade granola, created an exquisite textural contrast. To cap off our meal, we were pleasantly surprised with small pieces of milk chocolate as a final touch. This added gesture made the overall brunch experience reminiscent of an upscale tasting menu you'd typically find at a dinner course. Le service était excellent. Nous avons été pour le lunch un vendredi vers 13h15 & l'endroit était presque vide, donc plus calme & un service très rapide & attentionné. Le plat de magret de canard était certainement l'une des assiettes les mieux équilibrée & présentée que j'ai eu droit depuis longtemps. La viande était très juteuse, la cuisson parfaite & tous les éléments du plat se complémentaient à merveille. La beauté de l'assiette, les couleurs & disposition des aliments confirme que c'est un grand restaurant gastronomique. Vraiment très beau travail en cuisine. Je reviendrai certainement lors d'un prochain passage à Québec.View more
Une très bonne brasserie à la française. Il serait plus juste que je mette 4 étoiles & demi, car il m'a manqué l'effet wow sur plusieurs plats. C'était tout de même très bon. Bravo à vous. PS: comptez 250 dollars environ pour 2 personnes.View more
Went on a Saturday night with my family including my rather particular parents. All were very impressed with the service, atmosphere, & most importantly the food. We ordered 4 appetizers including the mushrooms & the char carpaccio & they were phenomenal. For entrees, we got the chicken, char, scallops & red snapper bisque. All were excellent & are recommended. We found the pricing for the food & the bottles of wine to be extremely fair. We will definitely be going back on our next trip to Quebec.View more

Nous avions réservé pour le brunch à 12h15. nous avions été très surprise qu'à cette heure-ci du service nous n'avions pas pu commander la création du jour. Nous obtenons à notre questionnement sur l'heure à laquelle faudrait-il venir pour avoir la chance d'y couter, une réponse du serveur vexé avec un ton bien supérieur que nous étions en fin de service & que tout dépend de l'achalandage ... à savoir que seulement un tiers du restaurant à peine était rempli...Niveau repas, rien d'exceptionnel, juste un oeuf proposé dans les plats pour faire brunch.. rien de bien original surtout pour une petite poutine au goût d'Ahston & une salade verte un peu passée. staff was helpful with wine recommendations. the beef cheek was incredible, super tender & very flavorful. vegetarian options were somewhat limited but were also quite tasty. the dessert options were spectacular. we tried the maple creme brulee & the seabuckthorne meringuee with the dessert wine pairings & were blown away. would certainly come back.View more
