It's the place to see & to be seen when you are in Quebec City. Charming old world bar with very skillful & professional bartenders. A bit pricy but it's the experience you pay for.

it reminded me why I usually avoid hotel bars. Went there past 10pm, still quite a few people at the bar & around. It was obviously closing time for the bartender who couldn't be bothered actually bartending & preferred work on doing their closing duties in our face. Somehow managed to mess up a Negroni & an Old Fashioned before disappearing leaving us hanging for the check.

I am not sure why the usher was so grumpy. The bartenders were very accommodative but I wouldn't expect them to not have ingredients for 2 out of 7 cocktails on the menu

Wonderful craft cocktails that are made by the most professional bartenders I have seen. The atmosphere of this bar oozes class & refinement.

Really cool bar inside the Fairmont in Quebec City. The bartenders & wait staff were extremely friendly, professional & knowledgeable. We patronized the car a couple of times during our stay & it was a pleasure. Only downside is how they control access to the quantity of seats available in the space. There is no standing room & they don't want other guests coming up to your table to chat if there isn't a seat. That's kind of odd, but I somewhat understand why they do it given the limited space they have.

Sipping cocktails at 1608 is amazing. You're greeted by friendly bartenders & immediately treated to a great display of skill. The drinks are next-level with flavours that don't seem to go together but once it hits your lips, you have made a good choice. The drinks are expensive. Make no mistake but you aren't here if you're concerned about the prices.
