We ordered the Green Fog & Volcano cocktails, & they were absolutely incredible! We also tried the'La Rose & le Renard.' The truffle fries were so fluffy & crispy, bursting with flavor. Everything was amazing. I felt transported back to the Raffles Hotels in Cambodia. The smokiness was incredible, & the flavors were perfectly balanced. The 1943 tasted like Canada in a drink-smoky, strong, sweet meets liquor. The mixology was fresh, vibrant, & at its best. Desserts were equally delightful, pairing perfectly with our drinks. The Apple Pie cocktail was another highlight; it literally tasted like an apple pie! All orders were handled by Guillaume, who was professional & friendly-a true pleasure to interact with him! The setting by the fireplace felt like being at a ski resort, which made the experience even more perfect. I highly recommend these cocktails & the place!

Bar 1608, located within the Château Frontenac, is simply stunning, beautifully decorated with rich wooden panel walls & elegant moldings that reflect the château's historic charm. It is the perfect spot to unwind after a busy afternoon of sightseeing.

The cocktail menu is a work of art in itself. It is beautifully illustrated, with creative storytelling & detailed descriptions for each drink. The cocktails are every bit as beautiful as their photos, & they deliver on taste: creative, well-balanced, & with a touch of whimsy.

Of course, it is not the cheapest place in town, but every sip feels worth it. True to Fairmont style, they know how to do it right. We thoroughly enjoyed our afternoon here & will definitely be back.

Beautiful interior with a great view. The cocktails are expensive but that's expected at the Fairmont. They were well made & the oysters were fresh. Definitely worth stopping by for a drink.
Sure, you're going to think $28 for a cocktail is ridiculous, but they're amazing. & they're not small, & very complex, so it took an hour to drink it. Very nice atmosphere, great staff, & nice complimentary chips.

We had a drink there & the cocktails were you uniquely created on site. The view & the atmosphere are amazing. Cocktail prices are higher as one would expect from a tourist destination of the caliber, but the experience was still worth it.

Shrimp cocktail was very underwhelming.
Paid $30 for 31/40 shrimp served with what I would call mayo/ketchup sauce. Paying this much money I would expect larger shrimp (6/8) with a homemade cocktail sauce & fresh horseradish . This is not something that should be served here but rather a local pub for half the price. Put the same effort on your food as you do with your drinks.
