Le Vieux Carré, the latest gem from Groupe La Tanière, not only delights the palate but also offers an unparalleled visual experience. We had the opportunity to interview Philippe Veilleux, co-owner and director of catering for Groupe La Tanière.
This group, already renowned for establishments like Tanière³, Légende , and Orygine, recently opened a new place with unique charm: Le Vieux Carré.

Located in the historic Leber house, in the heart of Old Quebec, this bar stands out for its warm ambiance, classic cocktails, and a menu carefully crafted by Sabrina Lemay, chef at Orygine.
A Strategically Chosen Location
Le Vieux Carré is located steps from Place de Paris, in the heart of Old Quebec, inspired by the famous French Quarter in New Orleans.
"We chose this location for its rich history and spectacular view. We wanted to create a place that recalls this iconic district's festive and welcoming atmosphere while adding our local touch," explains Philippe Veilleux.
Perched with a panoramic view of the St. Lawrence River, this bar is a true haven for those who appreciate beautiful views and moments of relaxation.
Authentic and Shareable Cuisine
The cuisine at Le Vieux Carré is orchestrated by Sabrina Lemay, also heading the kitchen at Orygine.
"Our menu is designed to be shared, with dishes that highlight local ingredients and simple, yet flavorful recipes," says Philippe.
Among the offerings, you'll find fresh oysters, caviar, light salads, venison tartares, mezze-like labneh, and marinated feta, as well as heartier options like escabeche mackerel and Cuban sandwiches.
The Vieux Carré's mezze platter, inspired by the Middle East, is adapted with local ingredients: muhammara is made with pumpkin seeds instead of walnuts, and the labneh is homemade with local yogurts. This fusion provides an authentic experience while showcasing Quebec products.
Signature Cocktails for All Tastes
The art of the cocktail is at the heart of the Vieux Carré experience. Inspired by the famous cocktail of the same name from New Orleans, Philippe Veilleux, with the expert help of Gabriel Saint-Pierre from Orygine and Simon Faucher from La Tanière, created a drink menu that marries classics and innovations.
"We wanted to create cocktails that perfectly complement the atmosphere of the place," he explains.
The drink menu also offers seasonal cocktails, mocktails, and a selection of local beers, wines, and spirits.

At Le Vieux Carré, no syrups or citrus from outside Quebec are used. To replace lemon and orange zest in their cocktails, they find creative ways, such as using marigold tinctures to replicate lemon zest and American spicebush for orange.
"We wanted to offer something for everyone, from refined cocktail enthusiasts to curious novices," says Philippe.
A Warm and Intimate Ambiance
The decor at Le Vieux Carré, designed by Stéphanie Bélanger from Rebel Design, contributes to the unique atmosphere of the place.

Hanging lights cast amber hues, while exposed brick and green curtains add a touch of rustic elegance. A large vintage photo of Old Quebec adorns the walls, adding a historical note to the ensemble.
A Unique Nighttime Experience in Quebec
Le Vieux Carré also stands out for its extended opening hours, serving food until 1 AM.
"There are few places in Quebec where you can eat this late without resorting to fast food," Philippe Veilleux points out. This offer allows night owls to enjoy a quality meal, even late at night.

With a capacity of 22 indoor seats and a summer terrace that can accommodate 46 people, Le Vieux Carré promises to become a popular spot for Quebec residents and visitors.
"We want each visit to be an opportunity to fraternize, celebrate, and warm the heart and soul, as Jacques Boisdon, Quebec's first innkeeper, said in 1648," concludes Philippe.
A Terrace for All-Weather
During sunny days, Le Vieux Carré's terrace becomes the ideal place to relax.
"Our terrace offers a breathtaking view of the river and Place de Paris. It's a magical place to enjoy a cocktail while watching the sunset," says Philippe.
But that's not all. The upstairs terrace is covered, allowing customers to enjoy the outdoors even in the rain.
"We wanted our customers to enjoy the view and fresh air, no matter the weather," he adds.
