Best cocktail bar in quebec city. We were here 3 nights & came every evening for the most amazing drinks, ambiance & the most professional service around. Highly recommend it!!!! It bit on the expensive side but you get what you pay for!!!

A true experience with a mystic feeling vibe. The whole bartending team are well experienced with a pleasant & friendly personality. They had some incredible signature cocktails.

Also some specially distilled/bottled whiskey made just for this hotel. Highly recommend even just to grab 1 drink.

We ordered the Green Fog & Volcano cocktails, & they were absolutely incredible! We also tried the'La Rose & le Renard.' The truffle fries were so fluffy & crispy, bursting with flavor. Everything was amazing. I felt transported back to the Raffles Hotels in Cambodia. The smokiness was incredible, & the flavors were perfectly balanced. The 1943 tasted like Canada in a drink-smoky, strong, sweet meets liquor. The mixology was fresh, vibrant, & at its best. Desserts were equally delightful, pairing perfectly with our drinks. The Apple Pie cocktail was another highlight; it literally tasted like an apple pie! All orders were handled by Guillaume, who was professional & friendly-a true pleasure to interact with him! The setting by the fireplace felt like being at a ski resort, which made the experience even more perfect. I highly recommend these cocktails & the place!

Google seems to think that this is a restaurant. This is a bar that serves appetizers. I think this is supposed to be reserved for hotel guests but we were served & were not staying at the hotel.

The cocktail offerings were unique & tasty. The drinks were served in appropriate glassware with single large ice cubes, where appropriate. This is a true cocktail bar.

We were served complimentary bowls of snack mix to go with our drinks. Half of the seating has views of the river. I would highly recommend enjoying a drink here.

Dec2024 Part of the impressive list of Fairmount roster of stylish bars all throughout the world, the 1608 also meets this prestigious list. The evolved menu of narratives about the creative cocktails is always unique & personal to each bar & is a homage to the creative mixologists behind them. Obviously, cocktails are highly recommended but also try their local gins & beers which have history & care to back them up. Their food menu is also varied as well & pairs well with the drinks. Do converse with the knowledgeable servers who can guide you to a noteworthy experience on your visit. The bar is very cozy & often crowded. I recommend reservations. Btw, if you are a hotel guest, they have a number of wine, beer & spirits tasting sessions that will give you a glimpse of the level of quality & effort they take in their bar & drink depts. Cheers.

If you're looking for a place that's well worth the hype, this is it. It's incredibly popular, so be sure to make a reservation in advance, but it's absolutely worth the wait. The location is fantastic, & the atmosphere & service are top-notch. We had a thoroughly enjoyable experience & would highly recommend it.

The atmosphere here is great! We enjoyed some fancy cocktails & mixed drinks on a Thursday night. Our waiter was very friendly & attentive to us. We didn't leave until almost 2am on a Thursday. Nice to have some night life within the hotel mid week. We would return for drinks again during our next visit. Highly recommend!
