On October 19, 1999, at 3:30 a.m., in a commercial premises on rue St-Joseph in the St-Roch district, after two years of preparations, training, work and tests, Patrick Nisot started the mess of La Boîte à Bread: a white dough on 25 kg poolish is divided into 20 baguettes, 10 Belgian loaves, 10 white squares, 10 white loaves and a few strings.

The mixer has been running for three days and the oven has been heating up. The first bread tests are given to the curious (we do not throw bread!). And the curious, there are! They are already waiting in front of the bakery. The door is still covered with brown paper, a sign of activity, a promise of openness. However, it is open because it is too hot in the bakery: no ventilation system has been installed. The only solution: open the door and offer the bread that comes out of the oven. There is nothing better to know the opinion of future customers!

October 19, 1999, 8:15 a.m. A curious refuses his wand offered free and absolutely wants to pay for it! A second customer is already here! The Bread Box is open! The adventure begin.
