On October 1, 2015, after 14 months of development, Noctem Artisans Brasseurs opens its doors on rue du Parvis in Quebec City in a brew-pub formula. It is not without a good dose of stress that this project including a complete catering offer as well as a craft brewery opens its doors with a team of totally inexperienced owners. From the opening, hard work has gone into providing our customers with the best products and the best possible experience with us.
From October 2017, with an independent and efficient team at the brewpub, work began to find a location to set up a can beer production plant. This project will see the light of day in December 2018 on rue Vincent-Massey in the Saint-Malo district of Quebec. The products brewed there are mostly recent IPA recipes such as Catnip, which represent a high proportion of the factory's production. These products are quickly finding takers and will justify an increase in the initial capacity from 250,000L in December 2018 to more than double following the expansion in April 2020.
Despite all these developments and the associated learnings, what drives us remains the hard and perpetual work to improve our processes and our products to offer our customers quality craft beer that they can then enjoy and share!

Had high expectations as this brewery was recommended by one of the locals we met at La Souche. Unfortunately did not live up to the hype. The service was really really slow. Felt ignored. Except for the young man who was the maître d, he was just excellent & covered for his wait staff incredibly well. I wish i got his name because he was just excellent. Worked June 6th at 6 pm. The beers were all just a bit below average with some funny aftertastes. The best one was their session Pass Sorti du Bois, which was very good & accidentally added to my flight by said maitre d, maybe he knows their best beer. Unfortunately the burger was just really not good. Some sort of meat patty which was over spiced, guessing to cover up what little flavor there was in the grey meat.
We visited as part of a beer tour. The snack plate offered some unique options. Beers were good. We returned & tried the duck hearts & a full tasting flight on the patio. Nice place to relax on a rainy day inside, or a sunny one outside! I also liked how the washroom was built around large rocks.

Good variety of beer styles, beef jerky had good flavour but the thick cut made it a little hard to chew, surprised not to see fries with burgers but hey everyone needs to eat their veg right! I ended up having the osso buco for dinner & it was amazing!
AMAZING! we were definitely surprised. From past experiences, breweries have great drinks & okay food. Typically, burgers, nachos, sandwiches, etc. The Noctem menu surprised us. It's quite small, only a few options, which made us a bit indecisive at first. We were not sure whether to try something new or stick to a good ol' burger with our beers. We ordered the burger & the osso bucco. What a surprise that was. Everything was cooked so perfectly. Every single component of the meal stood out, yet also blended perfectly with the other components. The burger: Insanely juicy. The bun was so so fresh, & toasted perfectly. Each bite was soft & crunchy. All the ingredients worked together very well. The salad on the side was so simple yet so delicious. Some greens with cherry tomatoes & a light vinaigrette. The osso bucco: The meat was falling off the bone. Each bite makes your mouth water. The puree was unbelievable. Vegetables were roasted well. The combination of all the flavours was perfect. The food was so delicious that we forgot we had gone here for beer. Beer: We ordered a flight as well as a few pints of one of their lighter beers. Great selection, great taste. Service: Really amazing. Our waitress was extremely helpful with answering questions, checking in on us, & had no problems with the language difference. We were not bothered while we were eating, & we were not rushed out after we were finished. Incredible service & delicious food+beer, for such a low cost. Our entire bill was less than $90. If we ever come back to Quebec City, this will be the first place we come to eat. Keep up the amazing work.
Cats, beers, what more could you want ? Very modern bar. The salad was great, the Bahn mi seemed to be missing something, but was good overall. The shrimp salad was great. The selection of beers was nice, & we found something for everyone.
J'ai passé un excellent après-midi, tout est à la hauteur ! C'est sûr 😜😜😜 que je retourne mercredi prochain. J'étais tout seul, mais l'atmosphère ne m'a pas fait sentir ma solitude.
