By combining freshness and creativity, the Bistro Hortus offers you a menu rich in local and organic products. For your greatest pleasure, chef Stéphane Roth presents a menu of the “Ferme à la Table” trend. With his unique cooking style, he puts the spotlight as much on meat and fish as on vegetables, always with a view to eco-responsible cuisine. An experience combining good food, good atmosphere and good prices awaits you!

Hortus is the proud owner of two green rooftop gardens located in the heart of Vieux-Québec, right above you! Our crops are quintessential part of your meal.

Our gardens will provide some of the fruits and vegetables used in our recipes. Production being limited due to space constraint, we work closely with Quebec farmers who grow organic produce.

OUR BEES

We also own multiple beehives placed onto large strawberry fields at l’ole-d’orleans, home of our Oh Bio partner. Tree beehives are located on the rooftop of Hotel du Vieux Quebec and greatly improve the pollination of our gardens.

The importance of bees to biodiversity

Besides providing their beloved honey, bees are a fondamental part of every aspect linked to the ecosystem. Bees are the most important pollinators, close to 80%, therefore essential to flowering plants reproduction. They are also vital through food chain, considering that 35% of fruits and vegetables depend on pollination by insects

Bon service. Toutefois, j'avais indiqué dans la réservation Libro qu'une personne était coeliaque, ça c'est une allergie au gluten. & bien l'entrée était servi avec un pain par dessous, j'ai dû le retourner. Le plat principal était fait dans une sauce à l'orge & il y a du gluten dans l'orge. On n'avait rien changé. Je l'ai mangé & j'étais incommodée. Enfin, le vin blanc était servi tiède. On nous a offert un deuxième verre froid.

Une belle découverte, c'est une cuisine originale par son mélange de produits du terroir mais toujours avec un bon équilibre des saveurs & des textures.

Menu Québec Exquis 2022 : l'entrée était bien, mais je me serais attendue à de bonnes lanières de bison poêlées dans la salade plutôt que de genres de morceaux qui ressemblaient à de la langue marinée. Le pavé de saumon sur l'orge était très bon! Le dessert vraiment décevant à mon goût. crème brûlée aux fruits avec un sablé ordinaire aux bleuets séchés & petite mousse de vinaigre balsamique... je suis plus du type chocolat.
