Having arrived in Quebec almost 20 years ago, Edouardo Balderas never wanted to compromise in his house, much less in his kitchen. As soon as we set foot there, we arrive directly in Mexico. Having lived his whole life in Mexican customs, Marco Balderas has always cherished the desire to introduce people to the cuisine of Mexico and more particularly that of Puebla where his family comes from.
