William, what a legend of a server. As a fellow food server, he is the definition of doing everything right. Immaculate care, deep knowledge of the food & subject matter, clear passion for what he does, & warm positive fun & friendly energy abound. The food here was 10/10, one of the best brunches I've ever had.

Update: William also recommended a'secret' speak easy for later in the evening. Turned out to be another total highlight of our trip, we were the only English speakers there & it made our night. The cocktails were phenomenal, & because of this he managed to make our day not just at brunch, but after dinner too 🤘Thanks William!

Chez Boulay - Bistro Boréal in Québec City offers an exceptional dining experience, driven by the outstanding & attentive service of Patrice & Antoine. Their deep knowledge of the unique boreal menu & warm hospitality truly elevate the meal, making every guest feel valued.We were from Ottawa with no reservations, but Patrice did an amazing job & make it happen.

I didn't like my food, the taste was below average, I wanted to adjust it myself with salt & lemon & asked for it & they said we don't have it we're not like other restaurants. Don't recommend this place at all!

The food was very disappointing. Ordered the beef cheek which was supposed to be the house speciality & it was bland. It tasted like it was boiled. Service was slow & lacked attention. All & all not enjoyable - would not recommend.

Despite this restaurant being for fine dining, I came in with low expectations because I usually struggle to find a meal that caters to my interests. I decided to give the pasta a chance & I was pleasantly surprised!

My favorite part of the dish was the baby corn that was spread around, I enjoyed coating it with the sauce before eating it. Even the sauce was wonderful on its own, it was very creamy & tasted a bit like cauliflower soup.

BEST french onion soup I've ever had anywhere! It was so delicious, decadent, creamy, tasty, all of the things. The cheese baguette was a perfect side with this dish. I ordered the beef cheek as an entree & it was good, but that french onion soup definately stole the show. The service was friendly but started off very slow. I waited awhile before anyone even came to take my drink order & people who were sat after me, had the opportunity to place their order first. I would return for the french onion soup if I am ever in QC again!

Una experiencia gastronómica extraordinaria y, sin duda, una de las mejores comidas que disfrutamos en Quebec.

Desde las entradas se percibe el enorme cuidado por el producto local y la creatividad de la cocina. El ceviche de vieiras estaba impecablemente fresco y muy equilibrado; el carpaccio de trucha ártica y corégono ahumado fue delicado, elegante y con sabores muy bien integrados; y la terrina de foie gras simplemente espectacular, con una combinación de frutas, miel y brioche que resultó memorable.

Como platos fuertes, la mejilla (cachete) de res braseada se deshacía con el tenedor y tenía una profundidad de sabor impresionante. La macreuse de res de Quebec estuvo perfectamente cocinada, acompanada de unas excelentes papas Pont-Neuf y un gran jus. El halibut de Gaspésie, con su costra vienesa y salsa bearnesa, fue un platillo refinado, perfectamente ejecutado y con un equilibrio excepcional.

Los postres fueron el cierre perfecto. La tarta de espino amarillo con merengue sorprendió por su equilibrio entre acidez y dulzor, mientras que la brioche con mantequilla de maple y crema diplomática fue sencillamente deliciosa y muy reconfortante.

El servicio fue impecable: atento, profesional y siempre dispuesto a explicar cada platillo y los ingredientes locales que hacen tan especial la cocina boreal de Quebec. El único detalle a mejorar podría ser el tiempo entre las entradas y los platos principales.

Un restaurante que celebra de manera magistral los productos de la región y que ofrece una experiencia culinaria completa. Sin duda, volveríamos.

Mi combinación/recomendación ideal:

Entrada: Carpaccio de trucha ártica y corégono ahumado.

Plato fuerte: Mejilla (Cachete) de res braseada.

Postre: Tarta de espino amarillo.

De tomar: Una copa de vino de la casa, el cual es un Cabernet Sauvignon canadiense.

Had lunch at Chez Boulay-Bistro Boréal last week & it was lovely. The Nordic/boreal concept really sets it apart - wild game, foraged herbs, & cold-climate ingredients you don't typically see on a Quebec City menu.

We had the trout, which was delicate & beautifully prepared, & the flank steak with a fresh tomato salad. Our server told us the tomatoes were grown on the restaurant's own rooftop - a really nice touch, & you could taste the freshness.

Service was warm & knowledgeable, happy to explain the ingredients & where everything came from. The atmosphere is cozy but still feels classy - wood & brick decor in the heart of Old Québec.

A great lunch spot if you want something that actually tastes like the region instead of typical French bistro fare. Highly recommend, & we'll be back to try dinner next time.

We had the Ceviche to start, Flat Iron Steak & Halibut for Main, & the Tarte for dessert.

The Ceviche was ok. The steak & Halibut were fantastic. The dressing & side everything was perfect.

The Tarte was good but not something I'd order again.

We were served by Fleurant & he made our experience even more enjoyable with his great service & sense of humor.

Would definitely go back.
