Great dining experience! Grab a reservation quickly if you can. The chefs guided the diners through a carefully created menu of 5 services. Great care is taken to use 98% locally grown & raised food ingredients. The flavours & textures in each course are amazing. Plenty of vegetables, & exquisite fish( arctic char- my fave) are used even though it was a meal in February. Example: from the fall harvest, corn was preserved & used in a cornbread & an emulsion! It takes great planning, creativity & foresight to be able to offer corn in a dish in February. We opted for the wine pairing. It's a must. The wines are carefully selected to perfectly pair with the food. We are planning to return in the height of the growing season for another dining experience.

Très belle expérience aux Faux Bergers.
Accueil très sympa de l'équipe. Les plats sont créatifs & mettent en lumière de beaux produits du terroir charlevoisien. L'usage de la fermentation, marinades, koji, etc. sont très intéressants. Les accords mets & vins sont stimulants & surprenants. & l'ambiance est chaleureuse & intime.
Certains plats, de mon avis subjectif certes mais informé (20+ années en cuisine & boulangerie), comportent quelques éléments qui me semblent de trop. & l'usage des pousses & graines me paraît trop répandu.
Mais ce sont des petits bémols à une soirée mémorable, avec un rapport qualité-prix excellent.
