Overall I really want to support Ramen establishments. The environment was nice & the service was solid. Ultimately though, I came for the ramen & broth, & it was very poor. I've traveled around Japan & am a regularly eating ramen in big cities in the US, this place was a significant departure from a traditional Tonkatsu flavor. It's uniquely watery & fatty. The other ingredients were ok, but I will say the edamame was great. At the end of the day, the broth is what's important, & for that it was not worth the trip.

This is my honest opinion. I wasn't upset by the service or anything like that. The staff were perfectly pleasant. My disappointment was entirely with the food.

I really wanted to like Hono Ramen because it presents itself well & the dishes look appealing, but unfortunately the food didn't live up to the expectations.

The biggest issue was the ramen itself. The broth tasted overwhelmingly fatty, almost like drinking rendered pork fat, & it became tiring after only a few bites. It was also extremely salty. The pork chashu was disappointing as well. There was far more fat than meat, & it wasn't seared or charred in any noticeable way.

If you want any spice, you have to pay an extra $3 for chili oil. Unfortunately, it barely added any heat & instead just made the already rich broth even greasier.

I'm from Vancouver & have eaten at a lot of excellent, authentic ramen shops, so I have a pretty good frame of reference. This just wasn't it. The restaurant's branding & concept led me to expect an authentic Japanese ramen experience, but between the food & the overall atmosphere, it never really felt authentic. It came across more as a restaurant inspired by Japanese cuisine than one that truly captured it.

The restaurant was also surprisingly hot inside. I was seated beside the ramen bar, & the heat coming from the kitchen made it uncomfortable enough that I had to ask to be moved to another seat.

To top it off, I found the prices high for what was served. Looking back, I wish I had spent my money at one of the restaurants in Quebec City that I already know & enjoy instead of trying this one.

Overall, it was a very disappointing experience. I wasn't looking for perfection. I just expected a good bowl of ramen, & unfortunately this didn't do it for me. I would not recommend it to anyone I know.

I had high expectations based on the concept & menu, but overall it was just average.

The miso ramen was much lighter than expected, with a broth that lacked depth & richness. The chashu was leaner & drier than the traditional style, which wasn't really my preference.

The marinated quail eggs were the highlight of the meal. Unfortunately, the salmon & shrimp korokke tasted more like a fish cake than a korokke, with very little potato flavor or texture.

I also tried the Cocktail of the Moment, but it mostly tasted like a standard cocktail with a hint of yuzu.

Overall, the concept is creative, but the flavors didn't quite live up to the expectations.

Ramen excellent. J'ai pris le tantanmen & je le recommande vivement. Ma seule déception concerne le cidre en fût. Je m'attendais à un format comparable à une bière en fût, mais il a été servi dans un petit verre (format un peu verre à whisky, rempli aux trois quarts). À 6 $, c'est un peu décevant.

Mitigé. J'avais mentionné une allergie aux fruits de mer & poissons pour mon poulet karage, mais le message ne s'est visiblement pas bien transmis jusqu'en cuisine. Ma conjointe & ma belle-mère ont pris un bol ramen végétarien.

En observant la cuisine à aire ouverte pendant environ 40 minutes, j'ai remarqué qu'un seul des deux cuisiniers s'est lavé les mains (deux fois), l'autre plus proche de notre table, pas une seule fois, y compris après avoir manipulé du poulet cru. Les linges pour nettoyer l'espace de travail étaient peu utilisés & traînaient sur le poste. J'ai aussi vu le même couteau servir à vérifier de qui me semblait des crevettes cuites, puis du poulet, sans nettoyage entre les deux. Difficile de ne pas se questionner sur les risques de contamination croisée pour quelqu'un avec une allergie.

J'ai tout de même mangé mon plat, qui était correct sans plus. Étant moi-même chef travaillant en aire ouverte, je sais à quel point ce genre de requête devrait être pris au sérieux & ici, je n'ai pas senti que la serveuse l'avait vraiment noté ni transmis avec l'attention nécessaire.

Service & ambiance corrects, sans plus. Pour les personnes avec des allergies alimentaires, je resterais prudent.

Je suis venue avec mon partenaire & nous avions très hâte de goûter au ramen! Malheureusement ce n'était pas pour nous, ma viande était trop brûlée pour que je goûte, les nouilles étaient dures & pâteuses en même temps & la soupe n'était pas bonne. Le vin était bon. Je pense que la nourriture conviendrait à un autre style de personne, car pour notre part nous n'avons pas pu finir notre repas. Notre serveuse était gentille.

If you are Asian or have tried real Ramen in Japan or Asia do not go here. I'm Chinese & had tried Real Ramen in Japan or Asian. This is a white people ramen place, the soup is totally wrong the noodle is a bit over cooked. The Char Siu is good but not real Ramen Char Siu.
Do not be fooled by the number of people going to this restaurant & the reviews, those people might not have tried real Ramen. Next door Hono Izakaya Japanese restaurant with Michelin recognition but from the pictures in their website I don't think they are authentic too. Safe your Ramen craving until you are back home. We ordered chicken karage, kimchi & dumplings. The karage & kimchi is ok but the dumplings is also totally unauthentic, the sauce is not soya sauce, I don't really how to explain the taste of the sauce & dumplings but totally not Asian. C$120 for 2 ramen & side dishes? Save your money & eat 3X in Japan

Easily one of the best ramen I've had in Canada. Its a very rich & savoury bowl of ramen. A tad on the oily side, but still very delicious. The bamboo shoots are clean & crunchy, with the pork tender & crispy. Highly recommended.
