Let me start with the good things, because, well, there aren't many, but credit where it's due. The staff were very polite & efficient, the place was clean, & the location is fairly convenient if you're coming from Old Québec. So yes, that's pretty much everything nice I can say.

Now, onto the disappointing part, which is, unfortunately, most of the experience.

First, the portion. I'm not sure if the kitchen uses a jeweler's scale to weigh noodles, but my bowl couldn't have had more than 100 grams of ramen. The restaurant is called Tora-Ya,'Tiger's Den', but this portion isn't for a tiger. It's more like something you'd serve to a Neko, which means a kitten in Japanese.

Then, the flavor, or should I say… the salt. Because that's pretty much all there was. No depth, no complexity, no umami flavor, just salt. I kept drinking water to dilute it, & by the end, I felt like a water balloon. Even my burps afterward were tasteless. Honestly, this isn't just far from the ramen I had in Sapporo back in 2017...it's not even close to what you'd get at a Chinese-run Japanese restaurant in Toronto.

Oh, & one more awkward thing: the restrooms. There are two, & the signs were so'artistically' ambiguous that I genuinely couldn't tell which was for men & which was for women. I picked an empty one, only to be politely informed by other customers on my way out that I'd used the women's. Upon closer inspection, yeah, maybe that stick figure had a skirt. Or maybe it was a ghost. Who knows? I understand the store wants to be unique. But just put an'M' & an'F,' or'Homme/Femme,' or even the kanji ?/?.

All in all...my experience was disappointing, overpriced, & oddly confusing. I would not recommend unless you're on a very strict low-carb, low-flavor, high-sodium diet. & yeah enjoy the guessing games at the bathroom door.

Probablement le restaurant le plus spécialisé en ramen dans la ville de Québec.
J'ai pris la version Shoyu & celle-ci représentait parfaitement bien ce que j'avais mangé au Japon. Un bon équilibre du salé, umami. Je prendrais toujours plus de tranche de chashu!

Restaurant authentique, service incroyable. Nourriture très bonne, porc du ramen tendre & garniture en très bonne quantité. Seul bémol je trouvais le bouillon miso un peu fade. Pas le meilleur que j'ai mangé mais une très bonne adresse. Je recommande

Excellente expérience au Tora-Ya Ramen! L'accueil était chaleureux & le service rapide & attentionné. L'ambiance est conviviale, parfaite pour savourer un bon bol de ramen.

J'ai pris l'?mori Miso, & c'était tout simplement délicieux : le bouillon miso était riche & réconfortant, les nouilles parfaitement cuites, & les garnitures d'une grande qualité. Le porc ch?sh? était tendre & fondant, l'oeuf mariné avec son jaune coulant apportait une belle gourmandise, & les légumes ainsi que le maïs ajoutaient de la fraîcheur & de l'équilibre. La portion est généreuse, idéale pour les amateurs avec bon appétit.

L'ambiance est cool, le personnel est sympathique mais je n'ai vraiment pas apprécié les ramens. Pour en avoir déjà mangé lors de mes voyages au Japon ainsi que de très bon en France, ceux-ci étaient vraiment très fades & peu gourmands. Pas beaucoup de bouillon, chashu très petit & sec, légumes sautés qui n'apportent pas vraiment de goût... je ne comprends donc pas tous ces avis positifs qui encensent leur cuisine.
Peut-être leur propre style ? En tout cas ce n'était pas au goût de notre groupe d'amis habitués à des ramens très umami

Vacationing from New Brunswick, solo & had to have some ramen while in Quebec. I will be back here!!! Sat at the counter. Atmosphere was on point. Loved looking up & seeing he inner workings for the business. Miso was buttery & the pork too melted in my mouth. So much so, I had to slow down the chewing to savour it, karaaga chicken was juicy with the spicy mayo & squeeze of lemon as the coup de grace, great pairing. It was a hot summer day & the Sapppro & Yuzu was more than I could have asked for. WORTH EVERY CENT! THANK YOU!!!
