We felt rushed from beginning to end. Being repeatedly hurried to order & pay, even before we finished dessert, is not acceptable for a luxury hotel. Guests should be able to enjoy their meal at a relaxed pace. Unfortunately, we will not choose this restaurant again.
Bistro Le Sam is located on the lobby level of the Chateau Frontenac. It offers beautiful views of the river & a decent selection of food & drink. The prices are high but that's kind of a given considering its location. We were staying at the hotel so we visited a few times & had great service each time. The bar makes delicious margaritas.
As so often is the case with large tourist hotels, you go for the experience & not the food. As other reviewers mentioned, the food was ok & very expensive. Appetizers & dessert were excellent but we both sent our entrees back - my pork ribs weren't just cold because they'd been sitting out too long, they were chilled inside because they hadn't been heated. My partner's risotto was undercooked & really bland. It was a special occasion & a high price treat for us so this was super disappointing. We appreciated the quick replacements for our entrees & we were not charged for them. We had wonderful drinks at the bar & it's a special place. Not sure why a hotel of this fame & caliber can't provide an exceptional dining experience.
We had dinner for New Year's Eve & it was so enchanting. The Hotel is beautifully decorated with trees & lights. We arrived early for our reservation at Bistro Le Sam & the hotel staff were so nice & welcoming. The host & waiter was so nice & attentive. The service was perfect. We had the seafoof ravioli casserole & the Flank steak & it was so delicious & plated with care. The restaurant is modern & cozy for such a busy night. We reserved for 5:15pm by Open Table App. It is on the pricy side but for a New Year's dinner it was so worth it. We had a wonderful time & recommend it. What a great memory for us.
Great atmosphere if you have the view. Otherwise it's just an expensive hotel bistro.
We ate at Bistro Le Sam as our first meal in Quebec after arriving at Chateau Frontenac for a stay. I'd booked the table well in advance.
The restaurant is huge, & we saw walk in customers being accommodated without issue.
The food was only OK despite the price tag, & the service was pretty dreadful. We watched the server walk around the restaurant with our appetizer plate going from table to table before it arrived.
Then, no one came to clear our appetizer away before our main course turned up. Cue the server having to put our dishes down to clear, & then provide us with new cutlery.
We didn't see a server again until the bill was requested.
For a restaurant in a five star hotel, this is far below a five star dining experience. Disappointed.
We stayed in the hotel for several nights & ate at le Sam on our final night. The atmosphere was excellent, it was lively & the interior design was beautiful.
The issue was with the service. Our server Max was inattentive, slow & arrogant. The hostess was great & seated us immediately, but we spent almost 2hrs at our table as a result of our Max's negligence. He seemed disinterested in serving us despite us ordering alcohol & dessert.
In addition to all that, as we left the hostess' were dealing with a massive line of patrons waiting for tables.

A high end bistro in a world class hotel, but the food is a bit overrated. I had oysters, which were quite ordinary compared with what we ate recently in Montreal (Darlings), onion soup which was very good, a beet tartare, which was just OK & for dessert they brought us a nice cheesecake to celebrate our anniversary. But the place has a great atmosphere - when you eat here you feel like you are somewhere.
The place is incredibly beautiful, featuring modern & premium finishes in a somewhat still classical Fairmont style. The service we received on our first dinner from Annie was wonderful! She made us feel so welcomed. The food was just average, like comfort fare, & lacked refinement. The prices were slightly too high for the quality & flavors. We had a lobster roll with caviar, poutine, a Burger Château, & chocolate pudding. It was enjoyable but definitely didn't feel like 5-star hotel food.
Our lunch the second day with Marco, who was super friendly & took good care of us, was pleasant. The Canadian oysters were delightful, & the seafood ravioli gratin was rich & tasted fine. However, the filet mignon was overcooked (medium) when I asked for rare, making it not so tasty. Another issue was that they only have two champagne bottle option.
The atmosphere is still very enjoyable. I would not choose to eat there if I had the option.

It was 11:30 am on a Tuesday & we were looking for lunch near the Fairmont Hotel. We'd eaten at Bistro Le Sam in 2022, so we knew the food would be good, albeit pricey.
We didn't have a reservation, so we could not be seated near the windows overlooking the terrace. We were seated in a comfy half round booth.
I ordered the Caesar Salad with Chicken. My wife ordered the French Onion Soup & the Lobster-Crab Arancini.
My salad was excellent. Her soup was also excellent. Her Lobster-Crab Aranacini was not good. It was mostly devoid of any seafood at all.
The service & the atmosphere were great.
We'd eat here again.
