Complete mind blowing experience! I drove in from Toronto to try this restaurant & it was definitely worth the trip. I do think this is Canada's best restaurant & they get my vote for Canada's first 3 Michelin star restaurant. Food is phenomenal but what separates Taniere3 from other top restaurants in the country is the experience. They go above & beyond with pretty much everything. The restaurant is stunning, service is phenomenal 12/10, moving around in multiple different dining rooms, the code to get in, & keys to open drawers. I was left completely speechless I'll definitely be back!!!
Tanière³ lives up to its 2 Michelin star reputation! Every dish felt so carefully thought out, creative, beautifully presented, & of course delicious. Each course was fresh, seasonal, & deeply connected to the Canadian terroir. The service was just as impressive. Everyone was so attentive, warm, & knowledgeable.
The setting made everything even more memorable. The restaurant is tucked into these historic underground stone rooms in Old Quebec, & getting to experience three different dining areas throughout the meal was such a cool touch. One of our favorite moments was the table-side sauce preparation with fresh local honeycomb straight from the apiary slat. & we also loved the caviar crème brûlée, unforgettable! Thank you to the entire team for such an incredible experience.

Un souper à La Tanière³, le seul restaurant au Canada à détenir deux étoiles Michelin, est une expérience à part entière. Rien à voir avec un souper dans un restaurant ordinaire. C'est une véritable chorégraphie de petites bouchées qui se succèdent à table, chacune accompagnée d'une description détaillée. Chaque plat met en valeur des produits du terroir, sublimés & servis avec des vins exceptionnels.
Souper à La Tanière³ ne ressemble à aucune autre expérience culinaire que j'avais vécue auparavant. On n'y commande pas une entrée, un plat principal & un dessert : on se laisse plutôt guider à travers une suite de découvertes. À chaque bouchée, de nouvelles saveurs apparaissent, parfois surprenantes, mettant en vedette des ingrédients rares & soigneusement choisis.
Évidemment, le prix est élevé, & ce n'est pas une expérience que je répéterais chaque année. Mais ce souper s'apparente davantage à une visite au musée de la gastronomie : un ballet de petites bouchées qui défilent, environ dix-sept au total, pour composer le repas complet.
Si j'avais une petite réserve, ce serait peut-être du côté du dessert. J'aurais aimé quelques bouchées sucrées supplémentaires, avec des notes plus chocolatées ou caramélisées, car le dessert, à base de pomme, restait plutôt délicat & peu sucré. Mais c'est vraiment une question de goût car je préfère les desserts plus sucrés.
Cela dit, l'expérience demeure absolument formidable. Je suis profondément heureuse d'avoir vécu ce moment unique pour célébrer mon 52e anniversaire - un souvenir précieux que je garderai longtemps.
Ce n'était pas dans nos goûts. Si vous n'aimez pas le foie gras, les morilles & le caviar, n'y allez pas. Très cher. Félicitations quand même pour votre étoile Michelin.
An experience. Everyone I spoke to said Tanière was about more than just the food. & they were right. It was the most complete dining experience I've had in North America. Exceptional cooking, thoughtful presentation, creative/local ingredients, warm hospitality, & a coherent story that ties everything together.
The evening began enigmatically. I entered a door code, descended into what felt like an underground vault, & arrived at a speakeasy-style lounge. After a few small bites there, I was escorted into the main dining room (the chef's counter). With the low light, heavy wood, & intimate setup, sitting at the counter felt like gathering for a secret meeting in a medieval chamber. One of the perks of the chef's counter was the clear view into the kitchen, & more importantly, being served directly by chef-owner Nicol for several of the main courses.
Food-wise, there wasn't a single miss. Despite nearly 20 small bites & dishes, nothing felt repetitive in concept or flavor. I visited at a perfect time for Canadian seafood, with prime ingredients from the coasts & the St. Lawrence River like bluefin tuna & scallops.
The dry-aged bluefin tuna may have been the best seafood dish I've ever had. Each bite was packed with deeply concentrated umami, enhanced by bright, fruity notes of plum & blackberry. What elevated it further was the non-alcoholic pairing, which echoed one of the dish's core flavor notes & reinforced the overall composition rather than competing with it. This approach applied through the rest of the menu. The pairings consistently mirrored a central element of each dish, which added depth without sacrificing creativity or flavor.
Dessert was also impeccable. The corn madeleine, corn cannoli, & popcorn reimagined one of Quebec's most pedestrian crops into something playful yet refined.
Among the dozens of Michelin-starred meals I had last year, this was undoubtedly in my top three. Would definitely be back to try their other seasonal tasting menu.
Best dining experience of our lives. Is it five times more expensive than most restaurants? Yes. Is it worth it? Also yes. If you have the chance to secure a reservation, you will be glad you did.
We will absolutely do this again at the next opportunity. I won't say more, because part of what makes the evening special is discovering the moments as they unfold. It is a whimsical, immersive experience from start to finish.
My wife & I have dined at Michelin-starred restaurants in Tokyo, Budapest, Rome, & elsewhere. This surpassed them all. Officially two Michelin stars, but very clearly a three star restaurant in the making. Bravo.
