Wow. Just wow. My fiancée & I had her birthday dinner here, & days later Tanière³ got its two Michelin stars. I'm not surprised at all - they absolutely earned it! This was easily the best meal I've ever had in Canada, & I've been to a lot of top spots.
The whole experience starts with this cool sense of mystery, showing up to a yellow door & using a code to get in. Right away, I knew this was going to be special. We started in the'first vault' with some incredibly tasty mocktails & amazing small bites. Then, after a quick peek into the back kitchen, we moved to the'chefs counter vault' for the main event.
Honestly, it's hard to find the words to describe how good everything was. Every single dish was a 10/10 - no misses, nothing that was just'good but not great.' The amount of thought they put into sourcing, preparing, & presenting each part of the meal is just perfect. Chef François is a true master, & you can feel his passion when he explains the dishes; he's not just reciting a script. All the staff were fantastic too, super attentive & seemed to know what we needed before we even had to ask.
We did the wine pairings (highly recommend with a tasting menu like this). They have two options, the'Experience' & the'Collection.' Hot tip: if you're there as a couple, get one of each. You get to try way more, & it was cool to see the difference - like tasting a 2017 French Pinot Noir next to a 2023 Quebec one.
We finished up in the'dessert vault,' which had this amazing ceiling covered in paper hummingbirds - a really special touch for my fiancée. The desserts were out of this world & the perfect end to an incredible night. The whole dinner was about 3 hours, but it was paced perfectly. We never felt rushed or like we were waiting around.
Seriously, I'd 100% recommend travelling to Quebec City just for Tanière³. It's not just dinner; it's a whole experience. If you want the absolute best of Canadian dining, this is it.

The tasting menu was incredible. Starting in a room for appetizers. Then moved to a room for the main & finally a different room for dessert. 15 dishes in total. The service was impressive. The explained everything dish dish. Overall. A fabulous meal & experience. If there was a Michelin, they would deserve it.
Probably one of the best dining experiences I've had in my entire life. The food is absolutely delicious, with an emphasis on local ingredients from Quebec & the Boreal forest. The location is a'speak-easy' style in a historic setting, & you move to 3 different seating sections throughout the approx 3 hour dining experience. The staff are fluently bilingual & very attentive to your needs. The finishing touch of the personalized menu at the end was a highlight! Overall, an incredible experience & my personal highlight of my trip to Quebec City. Deserves a Michelin Star for sure.
Wow! Restaurant Tanière deserves all the praise lavished by reviewers & then some. Similarly to other reviewers, we have eaten at many highly credentialled & starred restaurants, & can endorse that this meal & experience is on par with the best of the best. The use of native & locally-sourced ingredients was imaginative, balanced & unforced, the flavours were highly novel yet still delicious, & the experience engaging without over-pretention. The premium matched wine was expertly paired & very reasonably priced. Overall, an experience well-worth travelling a long distance for - reserve while you can, before it receives Michelin endorsement!
Une expérience incroyable. On est transporté dès le début dans une autre réalité où les saveurs florales sont reines. Chaque plat a un thème particulier, une présentation très recherchée, & s'accorde parfaitement avec le vin proposé. Le personnel est très sympathique, plein d'humour, & répond à toutes nos questions. On s'est marié très récemment & c'était l'endroit parfait pour une prélude à notre lune de miel l'année prochaine. Le seul tout petit commentaire c'est que la description des vins était souvent faite avec des références aux plats du menu régulier. Comme on avait un menu végétarien, cela brisait un peu l'immersion. Mais je comprends tout à fait que le personnel ne puisse pas retenir tous les plats spéciaux de chacun, alors cela ne va certainement pas m'empêcher de revenir la prochaine fois que je passe à Québec Je leur souhaite du fond du coeur de gagner cette étoile (ces étoiles ? ) Michelin. J'ai fait deux 3-étoiles dans ma vie & la Tanière surpassait mes expériences passées.
