Our experience at Tanière³ was nothing short of extraordinary. Everything was beyond belief from the moment we went through the door. The atmosphere of the cellar is like no other restaurant, steeped in history. Chef Francois-Emmanuel Nicol & his team made sure every dish was prepared with the utmost care & presented in beautiful fashion, each detail of the dish explained with passion. The wine pairing received no less attention, each wine chosen to perfectly accompany the course with the appropriate explanation on the choice. The food itself was spectacular in every way, leaving you speechless for how amazing it is. I can confidently say that this is one of the best restaurant experiences in the world.
Taniere is more a culinary experience than it is a restaurant. The cuisine is theme based- ours was focused on the forest North of Quebec City - & is served in courses with selected wine pairings. Once a reservation is confirmed you are provided with an arrival time & a door code to enter the restaurant. We were immediately escorted to the wine vault & provided with aperitifs before a salad & hors d'ouvres. After our palates we're sufficiently prepared we were escorted to the main dining area for our main courses of caviar on a bed of creamy potatoes,lobster, venison, & Wagyu beef- each served with its complementary wine. Finally, we were escorted to a room for a variety of desserts & digestifs. The presentation is immaculate, the food quality superb, & the service excellent. You are ultimately provided with a personalized menu to chronicle the experience. Prepare to spend three hours & some financial outlay on this unforgettable experience.
We had a wonderful experience this past Thursday while in Quebec City on vacation. The experience from the initial email when booked, the secret code to enter, the welcome by our names when greeted as well as the food & wine pairings as we moved throughout the vault from appetizers to entrees to desserts was simply without words to describe! The posts of our pictures of no food was purposeful to add an element of surprise for those that are attending soon! The attention to detail & knowledge of all staff was impeccable. We have recently dined at The Restaurant Pearl Morissette (in Jordan Ontario near we're we live) & by far our experience was unmatched at Taniere3! As foodies ourselves we embraced our time & memories we now have! Looking forward to our next visit & return for a new experience! Thank you for offering this experience & continued success! C'est en fait plus qu'un restaurant ou même une simple expérience culinaire, c'est un spectacle, de l'art pure! 😅 L'expérience du chef en vaut vraiment la peine, avec le wine pairing. Prévoir au moins 3 à 4h, mais j'ai adoré tous les instants, les surprises, les plats, les différentes salles, leurs histoire, leurs décoration & encore plus le fait d'être servie des produits du terroir de chez nous! I was very, very happy to be able to reserve a spot here just a week in advance. Michelin is not in Quebec City, but if it was, Taniere would surely get 2 or 3 stars. It was an experience from top to bottom. To begin, once a reservation is made, you will receive a secret door code for entry into the unassuming, unmarked yellow door outside. Once within, you immediately descend into a forested vault that was built 500 years ago. The sounds & smells of the forest fill the air. We were greeted by name once we made our way through the woods to a desk where we gave up our coats. Afterward, we were led into the first room where we are told about the experience & choose our drink pairings for the night. I chose the Wine Experience, & Shahrzad chose the non-alcoholic, which was phenomenal. We were also served our first series of courses. Next, we moved to the main dining vault past the Chef's Table, which you can also reserve if you are lucky enough. There, you can watch everything being created. Once seated at our table, we were each given two small antique keys that open two drawers on each side of the table. These drawers contained a personalized card with a poem hinting at the signature dish, Noble, as well as our napkin & utensils. Here in the main vault, we were served our next 7 courses. Two of these courses might be the best dishes I've ever had in my entire life. Each dish is brought out by 2 servers who deliver it to the table in perfect sync. Another member of the staff describes each dish, the ingredients, the inspiration, & the sources, which are all local to Quebec. Every part of each dish is sourced locally. If you can't get it in Quebec, it's not used in the dish. That includes things as common as olive oil & as popular as chocolate. About 2 hours into the experience, with 15 courses down, we are moved to the final room for dessert. This room is filled with trees, both sculptural & real. The ambiance is different, & the space is suited for wrapping up the journey they took us on. Here, we receive the final 6 dessert courses as well as dessert drinks. What an incredible 3 hours. This was the top dining experience I've ever had, & a few of these dishes were the best I've ever had. The entire 3-hour dinner truly was an experience from the moment we arrived outside to the moment we found our coats waiting for us outside the final room. The attention to every last detail in the food, the dishes, the space, the service, everything was perfect.
Tanière is a top notch gastronomic experience in the heart of Old Québec. Every plate & cocktail is served with a story that links the local ingredients, the history of the house & the modernist cooking techniques. The experience takes place in the vault of two 17th century houses decorated in a cosy & hospitable way. The wine pairing made me discover a lot of new regions & varietals. Throughout the evening, the staff was happy to answer questions & pace the 20 courses to our rhythm. An all around outstanding evening that enchanted us from start to finish!
If Michelin Stars were more widely spread in Canada, this establishment would easily get 2 stars (even potentially 3). For a fine-dining experience like no other, definitively worth a stop. Everything from the food, the venue, the staff, to the attention to detail contribute to a fantastic adventure. You should definitively try the table d'hôte that will take you on a top notch 3h adventure with dishes from across Québec & Canada. We took the non-alcoholic pairing & I would argue that it might have been better than the wine pairing because of the meticulous preparations to make something delicious & compatible with the menu. This place holds a fantastic spot in my mind & I wish I had the funds to go more often. I'd go again in a heartbeat given the choice.
This was a completely new & exciting experience for us. Everyone was attentive & took incredible care of our table. The food was delicious & creative. We also loved how the wine complemented each dish. The pairings were beyond inspired.
Six years ago my wife & I ate at La Central in Peru. We thought the meal was fantastic & it featured all local ingredients from the different elevations in Peru. Last year it received the #1 ranked restaurant distinction in the World. Last night we ate at La Taniere & had the same experience & vibe. In fact, we liked it even better. The local food & exquisite wine pairings matched the service & atmosphere of the beautiful Quebec City. The attention to detail was appreciated & the explanation of each course was amazing. 5 stars ⭐️
My husband & I dined here in September, & it was by far the most fabulous restaurant we have ever experienced. We have traveled worldwide & would fly back to Quebec City to have this experience again! Lengthy tasting menu well worth the hours. The time flew by & we were amazed that we didn't notice the over 3 1/2 hours. Wonderful wine pairing. Incredible atmosphere! I am an Interior Designer & extremely picky. I cant recommend Taniere highly enough. If you are lucky, you will be able to find a reservation.
