Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Une expérience unique avec un savoir faire hors du commun. Chaque ingrédients des plats est méticuleusement travaillé afin de créer un assemblage parfait dans l'assiette. L'accord de vin est très bien choisi & juste avec les plats. On se sent pris en charge avec un service incomparable. Les gens sont polis & courtois avec un professionnalisme inébranlable. Je manque de mots pour dire à quel point les plats sont délicieux, le chef est un artiste qui nous fait vivre toute une gamme d'émotions en dégustant ses plats si bien exécutés. Le tout dans une ambiance feutrée & soignée, aucun restaurant au Québec n'a ce charme. Pour avoir fait plusieurs bonnes adresses au Québec je peux affirmé sans gêne que La tanière est loin devant & je suis impatient de récidiver mon expérience. Chaque dollars y est bien investi croyez-moi! Félicitations à toute l'équipe vous avez été parfait!

Toute une expérience. Du décor extraordinaire à la cuisine fantastique, créative & sublime. Ne pas considérer comme un restaurant dans le sens traditionnel du terme, mais plutôt à considérer comme un lieu d'expérience gustative dans une classe à part. Je sais que je vais y retourner.
