Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Ce commentaire n'est pas destiné à être publié. Je vous fais ce commentaire à titre constructif seulement. J'étais à ma seconde visite à votre magnifique restaurant. L'expérience fut tout aussi agréable que la première fois. J'ai seulement un commentaire à vous faire part. J'ai trouvé que la fin des plats avait une note très sucrée. Le vin avec le foie gras était sucré. La mélasse avec le fromage était sucrée. Après, nous avions le pré-dessert. le dessert & les mignardises qui elles étaient sucrées. Tout était excellent mais n'ayant pas une dent très sucrée, j'aurais apprécié que les deux derniers plats & les accompagnements de vins à la fin du repas en salle soient plus salés.

Incredible experience! One we soon won't forget. From receiving the secret code & directions to the hidden & unknown address on the day of the reservation, the incredible menu & venue!! It was a perfect evening & made our stay that much better!

This is not a meal, this is a full culinary experience!! Staff is incredibly nice & fun, & the environment adds a feeling of « time standing still » that allows you to focus on the amazing tastes offered to you. I strongly recommend taking the optional wine pairing experience as, in most occasion, it does enhance the food tasting. Clearly the most unique restaurant in town!
