In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Just wow... was blown out of the water from start to finish. Have been to many restaurants of caliber but this one definitely took the top spot for me! The flavours, the scenery, & the service were all top notch. Each course would outdo the last & all of our servers added to the experience by explaining the origins & backstory behind each dish. The flavour combinations were out of this world; the chef is truly a culinary genius. Can't wait to come back here again (& we will be back just for another meal here)!

Magnifique soirée, mon copain & moi avons adoré. & recevoir le menu à la fin de la soirée est une délicate attention car il aurait été impensable de se souvenir de toutes les saveurs dégustées autant dans l'assiette que le verre. Merci. Nous allons sans aucun doute recommander l'endroit ... & y revenir !

Excellente expérience gastronomique!! C'est sans doute ma meilleure. Le service y est fabuleux & ultra professionnel. Cet endroit est plus qu'un restaurant. Il
offre une histoire qui vous fait voyager dans les richesses naturelles de Québec. Préparez bien votre budget à vivre plus qu'un repas simpliste.
