Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Le personnel est vraiment professionnel & très à l'écoute des clients. Il y a beaucoup de travail dans la présentation des plats, touts aussi beaux à voir qu'à déguster. Toute une expérience à vivre!!! Bravo au chef & à toute l'équipe!

Nous avons vécu toute une expérience, dans notre propre ville! En l'espace de quelques heures, nous avons voyagé dans le temps, voyagé à travers différentes régions du Québec & du Canada puis, atterri dans une forêt enchantée! Chaque plat est travaillé dans les plus fins détails. & des plats, il y en a! Servis & expliqués avec passion par la merveilleuse équipe en salle. Tout simplement génial! Du début à la fin. La température ambiante est à point, la musique est juste assez forte, les chaises sont confortables, la lumière est juste assez tamisée ... rien à redire! Ils ont même donné un cadeau à ma conjointe dont nous fêtions l'anniversaire! Bravo!

This place deserves more than 5☆s. It exceeded any & all expectations. The experience starts before you even enter the restaurant with its secret codes & hidden entrance. Loved every single dish. Beautifully presented & LOVED the stories & explanations that came with each dish. Our servers were excellent & I loved that they always referred back to the Chefs & Barman to give them the respect they deserved. I went with the non-alcoholic cocktail pairing & I was so glad I did! It was such an experience to taste the different creations of Barman, Simon Faucher. My favorite was the fake Bordeaux. I enjoyed it better than actual Bordeaux! The Chefs & Barman here are real geniuses. Can't say enough great things about my experience here.
