Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Le prix a failli nous amener à éviter ce 'restaurant' qui ne montre pas son menu ni ses breuvages, & nous impose le tout une fois arrivé... mais le côté mystérieux a emporté notre curiosité. Bien que pour nous ce genre d'expérience ne se produira qu'une ou deux fois dans notre vie, nous n'avons pas été déçu! L'ambiance secrète, mystérieuse.. le service hors pair; chaque employé & même le propriétaire prennent du temps pour nous informer sur ce que nous mangeons, buvons, sur le terroir québécois... La nourriture agencée aux verres alcoolisés nous ont plût à un très haut niveau. Au final, c'est effectivement une expérience mémorable si vous êtes prêts à débourser. Je recommande un groupe de 4 personnes, pour discuter de ce que vous avez sur votre table, l'ambiance est merveilleuse pour cela!

Incredible experience from start to finish. My partner & I both agreed this was the best meal we've ever had. Highly recommend pairing with wine. Amazing food aside, the host, waitstaff, sommollier, etc were top-notch.
