Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Simply incredible from the moment we punched in our secret code. What an experience in every sense of the word. The food is art, the team were so wonderful - & to know you're dining in a room with 450 years of history is a trip in itself. Learning about each course from the servers & the significance & origin of all the local ingredients added a whole new dimension to the food. We've been to some pretty fabulous places but Tanière 3 is like no other. Hope to visit again!

Unique en son genre autant sur le point culinaire & présentation visuelle. Belle surprise le changement de pièce entre les services. Les serveurs nous ont fait voyager dans le temps, en nous partageant l'histoire du site & de ses vieilles pierres.

What a culinary adventure! From the instant that you enter the small yellow door you are taken away to another place. Be prepared to engage all senses: taste, smell, sight & sound! La Taniere preface that you need to allot at least 3 hours which is entirely true. Compliments to the chefs & entire staff. Well done & would highly recommend!
