Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. FAN-TAS-TIQUE!!! C'est d'abord une expérience gustative incomparable aussi bien dans les assiettes que dans les verres, supportée par des trésors de créativité & un savoir faire digne des plus grandes tables. C'est ensuite un lieu magnifique où énormément d'attention a été porté sur la décoration & la mise en valeur des pierres du vieux Quebec. Enfin, la qualité du service est juste parfaite, mis en avant par une excellente connaissance des plats, qui sont présentés comme un voyage au Quebec où chacun des sens est mis à contribution.

More than an amazing meal-an amazing experience. I have been to some of the top restaurants in the world including Centrale, Maido, the Fat Duck, & eleven Maddison park & this is right up there with those! This should easily be in the top 50 in the world.

Our experience at Tanière3 was incredible. The restaurant is beautiful & our meal was outstanding. They were able to accommodate a shrimp allergy & a vegetarian with no issues. The staff were wonderful & each time they brought a dish they explained the history of each ingredient, where it is found in Quebec & how the flavors compliment each other. They went above & beyond to make us feel welcome & comfortable. I highly recommend this experience to any food lover.
