Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. This is one of the most sublime dining experiences I have ever had. It is a 3-3.5 hour extravaganza so I was glad I made an early (5:30 PM) reservation. Our hotel was literally a 5-minute walk from the restaurant which was very convenient. It is pricey but worth the money in my opinion, overall. The service was exceptional & the whole experience was very educational in terms of Quebec history mixed with dinner theater. If I had to provide constructive criticism it would be the $95 price tag for the wine pairing (pp). I think it should have been lower in price. By the end of the meal I was unable to drink the last two glasses of wine because I was feeling pretty full & borderline nauseous. I also thought the dessert was a bit disappointing when compared with the rest of it all. It is one of the few restaurants I would rate a 10/10. The other thing I think they should reconsider is pricing their meal based on the day & time you eat there. That seems odd to me. I will most certainly return during my next visit to QC. Thank you for a memorable & lovely evening.

Everything was beyond expectations! They made finding & getting there rant easy. It was super cool the password & unmarked door was. The food, service & both wine, & non alcoholic drink pairing sets were fantastic. Most of the food was made.with al l things I've heard of (mostly! Haha) but just prepared & paired with other flavors in such amazing & different ways.

The attention to see detail from the staff to the food to the decor was above & beyond. We changed our seats early on in the meal & the staff, without question, just new the drinks we had & food preferences. Music was subtle & purposeful for each cellar. Everything was spectacular.

Worth every penny.
