Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Super expérience ! Du jamais vu dans la région de Québec ! Quel décor wow c'est époustouflant l'authenticité de l'endroit extrêmement bien aménagé mais en respectant l'histoire du bâtiment ! La place vaut le déplacement & que dire du service & de la qualité de l'accord mets & vins ! Nous étions un groupe de 11 & nous y avons tous passé une super soirée. Tous les services ont été servis à la bonne température avec du personnel fort agréable. Toute une expérience bravo à toute l'équipe !

Interesting experience like no other. We liked some dishes more than others. The upgraded wine offering once you arrive is not worth the money. Our single significant complaint was the sommeliers raising her voice to us as we were paying the bill., of 900$. The interac was in French & we needed time to read & understand, which seemed to upset her greatly as she chastised us as though we were stupid. This inappropriate behaviour occurred in the last room, infront of other patrons. Who were all looking. It was terrible. She ruined the tip for everyone. Not sure we'll recommend or return.

The experience was a lot of fun. The food was extremely good & the preparation & presentation was exceptional. The wine pairings were excellent.
The beverage options & pricing were not clear & we were surprised when presented with the bill. There was a bit too much food & the whole dinner lasted 3.5 hours which was too long.

Un parcours gastronomique parsemé d'attentions où les plats se succèdent, tous savoureux les uns comme les autres, merveilleusement orchestrés avec minutie & souci de la présentation.
