Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. This was undoubtedly the most impressive dining experience we have (& will likely ever have) had! Every element was orchestrated with such fine detail to truly appease each of the senses & the servers were all a pleasure. The wine pairing is a must; your palate will be happy. Dès l'entrée, nous devinions que la soirée serait plein de surprises des plus agréables. La qualité de l'accueil, le professionnalisme de toutes les personnes ayant à nous servir est réellement à souligner. La qualité recherchée des présentations & les saveurs exquises qui émanaient de tous les plats en plus du choix très judicieux de la sommelière. Cela a surpassé de beaucoup nos attentes & ce, même si on nous avait dit que l'expérience était exceptionnelle. L'ambiance a contribué à savourer encore plus les plats présentés & ce du début à la fin.
Il est certain que nous parlerons avec bonheur de notre expérience & la recommanderons à nos familles & amis.
Merci de nous avoir permis ces moments agréables.

Je n'ai jamais rien vu de tel. Le service est incroyable & la nourriture aussi. Ca sort de lordinaire. Une histoire est relier avec chaque plat. A vivre au moins une fois dans sa vie. Je le recommande

The food is good, the service is ok. The atmosphere however is like in many regular restaurants, it dies not leave you a filling of an adventure, something special, something on a par of the very expensive place. Not a place we will visit again. Joseph
