Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. The initial intrigue, lovely miniature appetizers, paired with delicious non alcoholic pairings were Superbe! We spoke of all our friends who like to visit Quebec, & how we would tell them they must go to this fine restaurant.

The reason for deducting a Star was for the management's inability to get rid of a drunken lout & his partne. The drunk was swearing, left his table for another group of friends.

Never in our adult lives did we see such behavior go unchecked.

It ruined a perfectly good evening. Please ask such people to leave in future. Control your establishment.

Nous avons vécu une expérience immersive très efficace ! Très bien mangé, l'ensemble des plats proposé est expliqué par un personnel professionnel, aimable & attentionné. Ça fourmille discrètement autour de nous pour nous offrir une soirée en feu roulant, nous n'avons pas vu le temps passé à table. Les décors sont mystérieux, il y a des surprises tout au long du repas. Nous sommes ressortis de la Tanière3 avec un sourire étampé au visage, réfléchissant à ce qui nous avait le plus plu sans arriver à trancher ! C'est un TOUT, du coktail de bienvenue à la dernière goutte de thé de la fin de repas... Merci à toute l'équipe du restaurant. On reviendra assurément.

Excellent experience! We have never seen such an integrated approach to dining. They brought together local history, culture, local food & top it off with wine pairings! Also physically changing environments throughout the meal made it feel like eating in 3 different restaurants in one night! & to top it all off one of the best martinis 🍸 I have ever had!

Best experience in Quebec! Best experience in my life. Staff was amazing, Rox & Audrey were the best! Food & wine parings were exquisite! I'm so glad that we got to experience this dinner! Definitely made our trip! Must try! Price is well worth every penny!
