Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. What a wonderful experience!! The place was a wonderland. I loved the ambiance, was very intimate lovely for a romantic dinner. The food & wine pairing was great, everything served was from Canada, organic & fresh. I won't provide details as the whole experience is to be a mystery. Please go & enjoy! If you are a foodie you will love.

Our experience at Restaurant Tanière³ was both educational & filled with a wonderful sense of connection & intimacy from the mixologist, server, sommelier, & chef. Everyone we encountered seemed to really love their part in this irreplaceable & unforgettable culinary journey.

The food could not be better. Some of the servers did not justify their price. Do I really have to tell them they should clean large areas of crumbs from the table? Further, a French speaking couple received visibly larger pours of the higher value wines than my table. They were nice, though, about providing us an additional cocktail upon request.
