Nestled within the historic vaults of Petit Champlain, La Tanière3 is a place outside of time, where each meal becomes a sensory immersion — a suspended moment. In this underground setting steeped in history, we offer an immersive experience built around a single tasting menu, crafted as a faithful reflection of our terroir, the season, and our deeply rooted culinary universe in Quebec.

Our cuisine comes to life thanks to a network of passionate partners. Five foragers, located in different regions of the province, give us privileged access to the richness of Quebec’s wild plants. Our meats come exclusively from carefully selected farms, chosen for their commitment to animal welfare and environmental respect. As for the vegetables, they are grown by a childhood friend of the chef, with whom he personally selects seeds every winter — a simple gesture, rich with meaning.

This close connection with our producers is the backbone of our cuisine. Once in our hands, these ingredients are transformed by our team with creativity and respect, aiming to surprise you and to honor the raw, subtle, and powerful flavors of our northern land. Be very proud of yourselves ladies & gentlemen. You've accomplished an impressive experience here. One that I will never forget. The attention to detail, the changing of rooms, the subtle differences in music in each vault, the incredible staff, & the engagement with your patrons truly brings the experience to the next level. A secret code to the door, the decor, the entryway, scents, sounds, all combine to tickle every sense & immerse your guests in a must have experience if you're a foodie visiting Quebec City. Wine pairing is a must & your somalier sure knows her stuff. Great work everyone! GREAT WORK!

We had a wonderful experience! The food & atmosphere were very special as well as the service! I had made the reservation for the wrong night, as well as I have special dietary needs, they were able to accommodate us & didn't miss a beat. Highly recommend!

Un services impeccable, une décoration hors de l'ordinaire dans les trois salles que nous avons visité. Tout au long de la soirée, l'intimité était préservée & nous avions droit à un personnel enthousiaste & dévoué. Une expérience en soi, avec quelques judicieux mystères. Un grand plaisir pour les papilles.

We had the most memorable dinner & thoroughly enjoyed the night. The food was exceptional & the service was over the top. Free using our special code to enter, to the unique & special dishes, to the attentive staff, to the dining in three rooms & all with perfect drinks to compliment each course it was the perfect evening. While not inexpensive, the three hour event was worth every dollar.

This dining experience was unlike any restaurant I have ever eaten at before. Such food creativity! It pushed me to be adventurous with new food & I was not disappointed. Expensive but worth the price for this once in a lifetime feast. Wait staff was knowledgeable & super accommodating to the fact we did not speak French. Would absolutely recommend for special occasions!
