Super concept & expérience sans aucune fausse note! On sent la course aux étoiles avec de belles démonstrations techniques (pithiviers, opaline, sphérification,...) qui pourtant n'ôtent rien à la poésie & la légèreté du propos! Je conseille fortement l'accord sans alcool, où Simon propose un menu à côté du menu en mettant la mixologie au service de la nourriture encore mieux que l'oenologie ne l'ait fait jusqu'à présent! Courez-y, on est déjà en train de réfléchir à notre prochaine visite!
