Chef Jean-François Girard presents an innovative and contemporary approach to cooking "Bistro" with a lunch menu varies each day and taking its source in the different seasonal products from the greater Quebec City area. Fantastic classic, well prepared food. Everything was fresh & delicious. The service was impeccable. Loved the tartare trilogy, the veal cheeks, & the confit duck. Great wines by the glass & a really nice, French heavy, wine list. We certainly recommend.

We expected too much from this restaurant. After we were seated at 8:40 we sat for 20 minutes before I got up & asked for a waiter who promptly came with apologies. The appetizers were good but the steak was like a rock & they did take it off the bill. By 10 PM it seemed that the staff was in a rush to get us out & close. The wine very good. Overall pricey however we would give it another try.

We dined at L'Echaude our first full night in Québec City & it was a smash hit. The atmosphere was very trendy & a full restaurant is always a harbinger of good things to come. The service was relaxed & very friendly. One of our servers was kind enough to help us choose an excellent Spanish white wine that we were both very impressed with. On the down side, my wife ordered two appetizers for her meal & she wasn't particularly keen on either of them. She had the saffron crab cake & the salmon tartare. She found both dishes a bit bland to be honest. But I am writing this review from my perspective & the meal I had was phenomenal. My starter was the cereal-encrusted foie gras with cranberry chutney. It was hands down the best foie gras dish I have ever had. The texture & flavour were both exquisite & the chutney was the perfect complement. For my main, I ordered the leg of rabbit with homemade pasta & again, the flavour profile was spectacular. The meat was moist & rich, the pasta was melt-in-your-mouth & the sauce was superb. We soldiered on with dessert & the creamy chocolate strawberry tart was the perfect ending to a wonderful dining experience. I wouldn't hesitate to come again nor to recommend to friends. We'll be back!

I'm going to start off by saying that I'm never going to find Salmon tartare as good as theirs ever again (the curry ginger sesame one)... & l'm a little sad about that. Now for my review.

I can only say it was a pleasant experience from the moment I stepped in until the moment I was saying my goodbyes. Every staff we dealt with were super pleasant & most importantly were not annoying. It was a perfect balance of meeting our needs without them being in our faces.
The fact that it wasn't a big & rowdy resto, was even better. I didn't need to fight for attention nor did I need to feel like I should pop two pills & put in ear plugs.. I know i'm exaggerating, but, when it gets loud & rowdy, it can be very unpleasant.

As for food/drinks,

1) Entrée: Goat cheese with dried tomatoes. Yum. I have to say it was really good, & they gave a generous size on a plate. I may not order it again only because I am curious about other foods. This may sound a little crazy because I am not sure how exactly to word it but.. Thankfully they put a small salad on the side of the cheese. The tomato & cheese was very "warm" & I needed something fresh like a salad to cool the mouth.

2) Salmon tartare: omgiwanttodrive3hourstohavesomemoretartar. Like I mentioned it was the sesame/ginger tartare. It was really really really good. The only down side.. I wish there were a bit more of it. & by a bit, I mean a lot more of it.

3) flank steak/Bavette: PRO: ohh my my my. When I told them I wanted it Medium, with no blood on my plate... they really made sure to cook it that way. Not every day you can find places that know how to properly cook steak. The portion size was perfect
CON: I wish I had known that they put lots of caramelized onions on top of the steak. I removed them & my boyfriend happily ate them... but that was my only itty bitty comment I had about that.

4) Veal with lard & a melting a piece of brie (not on menu.. special of the night or something). was AMAZING. everything about it was great & you get a good size portion of meat.

5) I've been craving a good crème brulee because I have given up on ordering it out.. Echaudé did not fail me. Every bite was like tasting a little piece of heaven in my mouth.. I don't want to talk it up or get peoples hopes up. But I truly enjoy good quality food & this truly hit the spot.

6) Lastly, the variety of wine is incredible. There is something for everyone in there. no joke.. I feel like I've walked in a fancy looking SAQ.

In conclusion, I must go back.

My wife & I enjoyed a fantastic dinner at L'Echaude on a cold Friday in the fall. The service was top-notch; we never had to touch the bottle of wine we ordered as a server was always ready to fill our glass. The food was like the service: impeccable. I enjoyed the venison special, which was far more tender & moist than any deer-camp preparation i've had in the past, & balanced perfectly with an artichoke puree. My wife had the vegetarian entree, which clearly was not an afterthought on the menu as so many vegetarian dishes can be. After dinner, the host spent some time providing recommendations of other places in the area to grab a drink. With service to match the food, I'd strongly recommend L'Echaude to tourist & local alike.

A fine restaurant, somewhat Parisian in atmosphere. I liked both the food & the wine -- the food very good, the wine exceptional in everything but price. Highly recommended for a less than ruinous price!
