Chef Jean-François Girard presents an innovative and contemporary approach to cooking "Bistro" with a lunch menu varies each day and taking its source in the different seasonal products from the greater Quebec City area. That was, without a doubt, one of the best meals I've ever had. The food was so exceptional that we've decided to come back again today. Very friendly service with excellent food. You will be waiting for a while for your food (we waited about an hour after appetizers for our food), but my goodness is it worth it.

Nous avons diné avec ma femme dans ce restaurant & sommes sortis assez déçus. Nous sommes venus 3 heures avant afin de réserver pour manger ainsi que pour la table car nous ne sommes pas des fans de la climatisation à outrance. Le restaurant ne fait pas de réservation de table, ce qui est curieux pour un établissement qui se veut d'un certain niveau. Bref, arrivés à l'heure de la réservation, aucune table souhaitable n'était disponible & nous avons dû nous contenter avec ce qu'on n'aimait pas. Nous avons souhaité prendre un verre de vin rouge mais il n'y avait pas de vin ouvert local. Seulement des vins français ou italiens. Dommage de traverser l'océan pour boire les mêmes vins qu'à la maison. On nous a expliqué que les vins canadiens n'étaient pas « vendeur ». Encore bizarre car nous avons fait trois dégustations de vins sur l'île d'Orléans (juste à côté) & ils étaient fameux ainsi que le prix était raisonnable. Rien à envier aux vins français vendus chez L'Échaudé. J'ai commandé le « duo d'Agneau ». Malheureusement on m'a servi un mono. J'ai demandé ou est passé l'autre côtelette. On m'explique que le titre du plat a en fait été changé mais pas reporté sur la carte. A la place, il y à un minuscule morceau d'épaule d'agneau. On a demandé du pain & nous l'avons reçu mais contre payement. Bref, pas mal de choses très aléatoires ou carrément trompeuses. Nous ne recommandons pas ce restaurant.

We dined at l'echaude our first night in Quebec & sat at the bar (which we generally prefer) Our meal was outstanding but the highlight of the evening was Alexi the bartender. We loved watching him work his magic on the cocktails & loved his engaging personality. It was our favorite stop in the city for we were treated like friends.

Had dinner at Echaude this evening. Food was delicious, presentation excellent, loved every bite. Waiter who was also the sommelier was outstanding. Wine list excellent. A perfect dinner out. Couldn't recommend more highly.
