The table is set for Scalded the French bistro hippest part of Quebec. Chef Jean-François Girard presents an innovative and contemporary approach to cooking "Bistro" with a lunch menu varies each day and taking its source in the different seasonal products from the greater Quebec City area. Add to that a wine list with over 400 references carefully selected by our sommelier, Guillaume Blanchette, who will at the same time, advise you that unique bottle that will make you smile or the glass of wine that will marry perfectly with your meal . We dined at L'Echaude our first full night in Québec City & it was a smash hit. The atmosphere was very trendy & a full restaurant is always a harbinger of good things to come. The service was relaxed & very friendly. One of our servers was kind enough to help us choose an excellent Spanish white wine that we were both very impressed with. On the down side, my wife ordered two appetizers for her meal & she wasn't particularly keen on either of them. She had the saffron crab cake & the salmon tartare. She found both dishes a bit bland to be honest. But I am writing this review from my perspective & the meal I had was phenomenal. My starter was the cereal-encrusted foie gras with cranberry chutney. It was hands down the best foie gras dish I have ever had. The texture & flavour were both exquisite & the chutney was the perfect complement. For my main, I ordered the leg of rabbit with homemade pasta & again, the flavour profile was spectacular. The meat was moist & rich, the pasta was melt-in-your-mouth & the sauce was superb. We soldiered on with dessert & the creamy chocolate strawberry tart was the perfect ending to a wonderful dining experience. I wouldn't hesitate to come again nor to recommend to friends. We'll be back!

My wife & I, plus two close friends, wanted a casual & easy brunch. Our hotel, Le Germain in Quebec, recommended L'Echaude. We were not disappointed.

Upon arrival we were seated outside & immediately had a rapport with our server. To start a drink followed by some delicious brunch food.

The quality of the food was extremely high as was the level of service.

I would recommend L'Echaude - for brunch on a Sunday or for an evening meal.

This was the second visit in a week, we so enjoyed the first one. This visit was no quite so enjoyable, maybe because it was so busy or maybe just the good we chose did not suite us. Anyway a good evening out
