ARVI bouscule les conventions pour revenir à l’essence de l’expérience humaine en restauration. Formidable, de l'accueil à l'assiette qui met en valeur les produits & aliments du Québec (également avec l'accord vin, que je recommande). À noter qu'il y a également un menu 5 services végétarien qui met l'eau à la bouche. J'adore le concept: chaque membre de l'équipe maîtrise à la fois le travail minutieux d'élaboration des plats (dans la cuisine ouverte, accessible en tout temps à l'oeil) & le service attentif aux tables. On change donc fréquemment d'interlocuteur ou d'interlocutrice, toutes des personnes agréables, & surtout passionnées. Tout se fait sans esbrouffe dans les échanges, avec aisance & calme, on s'adresse au convive presque sur le ton de la confidence. On y retourne!
Wonderful from start to finish, with dishes that truly highlight Québec's ingredients (& a wine pairing I definitely recommend). I love the concept: every team member handles both the precise work in the open kitchen & the attentive service at the tables. You interact with several staff members, all pleasant & genuinely passionate. Everything is done with calm, ease, & no showiness-spoken to the guest almost in a confidential tone. Let's go back!
Cuisine Libre. Quebec fine dining spots seem to love breaking the rules of traditional hospitality. The trend's been around for decades, but here they really push it to the extreme. Just like Kebec club, there were no servers. Everyone plays every role: cook, sommelier, host, & server all at once. When they explain the menu or take your order, they'll casually sit next to/ across from you which honestly caught me off guard. The kitchen's literally within arm's reach. No partitions, just two countertops. It was like watching a live cooking class with your dinner right in front of you.
The menu was straightforward. Five courses with two optional add-ons, but with all the extra bites & surprises, it was closer to ten. Everything was well-executed & creative, but if I'm being honest, nothing really stunned me except the foie gras. Still, for the price, the overall composition was really solid.
Oysters - I've occasionally had New Brunswick oysters in New England, but these were noticeably larger. What made them interesting was how they're transferred to freshwater during growth, which gave them a sweeter, creamier finish after that initial burst of salinity. Worth adding on.
Bread & Butter - Simple house-baked sourdough. The butter, though, was next-level. A 1:2 mix of brown butter & regular butter, which created this smoky, umami-rich spread that could make anything taste better.
Petoncle - Seared on just one side, so one half warm, the other chilled. A thin slice of pepper was tucked in the middle to make a sort of'scallop sandwich,' finished with a light pepnper jus. Interesting idea, but the flavors never quite clicked. Subtle to the point of flat. On the side was a small focaccia topped with pâté mixed with pine nuts, anchovies, & peppers. Same story here. Nice in concept, but missing a spark.
Tuna - Served in two parts. The first was lean akami tuna with lobster-seasoned mushrooms & puffy rice. Good balance in flavors though I wished for a bit more temperature contrast. The second, grilled chutoro with risotto, was really good. Not too fatty, not too lean, just enough richness to give it that deep, satisfying finish you rarely get from cooked/seared tuna.
Butternut Squash - Squash is one of those ingredients that I think it's hard to make interesting. It almost always leans on spice or savoriness for depth. Here, they followed that familiar path but executed it nicely. Served both as a soft cake & roasted pieces, with a touch of spice & aroma from bay leaf condiments.
Foie Gras - Signature dish that's been on the menu since they opened seven years ago, so it was guaranteed to be amazing. Foie gras paired with dulce de leche mousse & a slice of milk bread (perfect thickness & a nice delicate crunch on the crust). They described it as'the best sandwich,' & honestly, I get it.
Piglet - What I loved most was the seasoning. No syrupy glaze or heavy salt cure, just pure pork flavor, amplified by a pork bone jus, apple, & carrots. The jus had the depth of a slow-simmered bone broth, concentrated but not salty, & it was incredible with a piece of sourdough to soak it all up.
I wish we could give ARVI 10 stars! If you're in Quebec City, ARVI is a must place to visit for dinner. Not only do they make you feel like family, the food is exquisite. It is thoughtfully prepared with the finest ingredients. Thank you ARVI for making our 50th girls birthday trip memorable!

Ok this was a very nice experience.
We were a party of 4 peeps & we had a blast!!
First of all, when I arrived i got confused because there was another restaurant next to it, then I kinda look to the glass & I saw random printed letters & it reads'A R V I', so i kinda like it is not a flashy place.
The service is great, they don't have serveurs so it's the same kitchen staff who's bringing the dishes & wine. They were all very nice & informative about anything we got to ask so'shout out' to them & the chef.
We have a 5 course dinner paired with wine & everything was delicious, it was a really nice trip with some unfamiliar flavors or ingredients, which we were so happy to take & discover.
100% recommended
5 course menu paired with wine plus services was around $200 pp
We stayed around 3hours & a half.
Ps. Look for'Domaine Arvi' on maps, this is the winery from the chef & they do have visits & food also, check it out!
Nous avons pris le menu dégustation avec l'accord de vins ce qui fut un excellent choix . Bien sûr je vous recommande de prendre le pain au foie gras en extra qui se révèle être un coup de coeur cochon mémorable!
Des plats confectionnés avec des ingrédients locaux qui nous font découvrir des producteurs d'ici. Une belle harmonie créé par le chef Julien Masia. Ce fut également un beau spectacle de voir toute l'équipe faire le service tout en cuisinant tout au long de la soirée.
We had a fantastic meal at ARVI. High quality food made from local & in season ingredients & excellent wine pairings. It's also quite the show in an open kitchen with every chef sharing all responbilities, both FOH & BOH.
What a wonderful experience! The food, drinks, service, & care received were all top notch. Arvi exceeded our expectations! Thank you for the wonderful service, incredible food (best halibut we've ever eaten), & lovely evening. PS - Bonus points of the insane amount of local ingredients used. This was really fun for a non-local to learn about what is grown/produced in this region!
Was lucky enough to visit this gem of a restaurant & felt compelled to write a review right away! The tasting menu was the perfect variety of fresh seasonal ingredients- tastes from all over Quebec- & probably the best vegetarian tasting menu I have ever had. The service was second to none- everyone very warm, inviting, laid back, & knowledgeable. The music was also spot on! I can't say enough about this restaurant- it was very memorable!

It was a great experience & fun to watch the cooking & service by all the chef. All the meal was superior & we especially enjoyed Tuna dish & dessert! Love your natural flavor (not too salty not too strong not attacky) to take advantage of the ingredients. Maya & Taka
