Everything was excellent. First time I ever ate sweetbread. It was delicious.
The steak was cooked perfectly. Accompaniments were well prepared as well.
The service was excellent. The waitress was attentive & the food came out perfectly timed.
The atmosphere was great. Exactly how a steakhouse should be. The music was mid century blues & jazz, not too loud so as to disrupt a conversation, but in the background.
Just a great place for a dinner.

Nous sommes allés souper au Charbon Steakhouse hier soir &, malheureusement, cette visite a été celle de trop.
Pour mettre les choses en contexte, nous sommes des clients réguliers depuis plusieurs années, tout comme le couple d'amis qui nous accompagnait. Lors de nos trois dernières visites, nous avons été déçus à deux reprises, mais cette fois-ci, l'expérience a été inacceptable.
Ma conjointe est une grande amatrice de côte de boeuf au jus & c'est précisément pour ce plat que nous avions choisi le Charbon. La conjointe de mon ami avait commandé la même chose. Les deux avaient demandé une cuisson médium saignant, mais les assiettes sont arrivées avec une cuisson médium bien cuite. Pour une côte de boeuf, c'est complètement raté : la viande était sèche & perdait toute sa qualité.
Lorsqu'elles ont signalé le problème, la serveuse leur a expliqué qu'il n'était pas possible de refaire une côte de boeuf puisque toute la pièce avait été cuite de la même façon. On leur a plutôt proposé une autre coupe de viande grillée. Déjà très déçues, elles ont accepté. Le problème? Leur nouvelle assiette est arrivée alors que le reste de la table avait pratiquement terminé son repas. Une expérience très décevante lorsqu'on vient souper entre amis.
À cela s'ajoute le fait que les assiettes avoisinaient les 90 $ chacune. À ce prix, on s'attend à une exécution irréprochable. Malheureusement, les accompagnements semblaient également avoir perdu en qualité : quelques carottes fatiguées sur une purée de carottes, sans grande recherche.
Autre point irritant : un serveur est venu nous proposer une deuxième bouteille d'eau pétillante. Nous avons clairement répondu non, puisque nous étions à la fin du repas. Malgré cela, notre serveuse nous en a apporté une quand même. Nous avons même cru qu'il s'agissait d'un geste commercial pour compenser les problèmes rencontrés. Pourtant, cette bouteille a bel & bien été facturée.
Au final, aucune compensation, aucun dessert offert, aucun café, aucune attention particulière, aucune réelle reconnaissance des erreurs commises. Ce n'est pas tant l'erreur de cuisson qui nous déçoit - cela peut arriver partout - mais plutôt la façon dont la situation a été gérée.
C'est avec regret que nous disons que cette visite sera notre dernière après toutes ces années de fidélité. À Québec, plusieurs excellents restaurants savent reconnaître leurs erreurs & démontrer à leurs clients qu'ils sont importants. Malheureusement, nous n'avons pas eu ce sentiment au Charbon Steakhouse.

Je recommande vivement ce steakhouse pour les grandes occasions. Le faux-filet était parfaitement cuit & notre serveur était très bien informé sur les différents plats du menu.
Absolutely excellent steakhouse, well worth the title. The steak was cooked perfectly & the lobster tail was seasoned just right. Shoutout to our server who was super fun, energetic, & honest! Great ambiance, & they even put the Stanley Cup Finals on when the game started. Extra points for the crème brûlée, amazing!
I ordered the filled minion & the wife a baguette.. Louis & Caroline our servers were absolutely fantastic. I wanted rare medium rare & got exactly that. Hard to do right but the chef nailed it hard. The creamed parsnips were amazing. The potatoes perfect. Money well spent at a place that earns your loyalty......& hunger. This place is absolutely the best steak house in town. Charbon makes that Steak Avenue place look & feel like McDonald's playhouse. Carbon has class, elegance & refinement. Top notch first class. Merci.
