Go for: Traditional Quebec cuisine with a modern spin. One of the best meals you'll have anywhere in Quebec. Avoid if: You prefer a quiet, intimate setting, or are a tourist that's unprepared to explore foods outside of your comfort zone. Something surprising: This place was started by two of the best chefs in Canada. Reservation needed? Yes, definitely. Overall Experience: 5/5. We just spent a week in Quebec City & loved'everything' about Chez Bouley (& the city) so much so that we had to go back a second time. First we had brunch & came back for dinner a few days later. The staff were friendly & attentive & just lovely. The ambience is casual-elegant, just right. Great cocktails & the best wine. & their food, oh the food was so delicious & beautiful, not to mention, fresh! We tried as many things as we possibly could. It kinda made up for the freezing weather!
