Frankly, really disappointing, primarily because of really terrible service - one of the easiest elements to quality-control .
I had been here years before, & remembered it as the single best meal I had in the city. This time, I ended up with a late (9:15pm) reservation; I understand folks wanting to get home, but if they really don't want to be there, they should cut off reservations when they will still provide quality food & service. We ordered the squab & the venison, & two local (& generally wonderful) aperitifs to start, vins glacés. The sommelier/captain was eager also to push us to order red wine for the meal before our food order had even gone in - a bad sign. But I said we'd decide when the food arrived. The kitchen was clearly in a rush to get done, so the food arrived promptly, followed by the captain, who plonked down the aperitifs (which he said, correctly, we're not suited to drinking with the food) on the table beside the main courses. The aperitifs were supposed to be one poiré (superb) & a vin raisin, which was great, but not what I had asked for, which was a pomme. (The captain had said it was, but clearly was just eager to upsell, at $24 a glass.)
The best part of the meal, fortunately, was the food itself. The squab was just excellent, & my partner loved her venison, though I found it bland, & overwhelmed by the parsnip purée.
But the drinks continued to be such a mess that they impacted the whole meal.
I realized the apéritifs were simply not going to work, so we put them aside for after the meal, & ordered what the captain claimed was a Margaux & a St Julien. He did not pour them at the table, but arrived with two glasses ready poured, & the bottles behind them on the tray. He again plonked them on the table & left.
No tastes offered - for very good reason, as it turned out. Whatever it was we drank had been left open literally for days. The wine was as dead as dust, & at $28 for one glass & $31 for the other (again, both upsells by the captain) it was an embarrassment.
Then the busboy eagerly barged in to clear the table - clearly another employee panting to make his money & get out. The room, by the way, was still 3/4 full. Since we hadn't had the time to drink our aperitifs, we were sipping them with the bread, which the busboy first cleared away, & then put back on the table when I demurred. But he put it back with gravy already smeared across the bottom, where he'd piled it on the other plates. So it left a ludicrous massive brown smear over the white tablecloth, which he totally ignored, & clearly could not have cared less.
The captain then reappeared promptly to ask if we wanted anything more & when we said no, hopefully suggested "l'addition?"
I worked in high end restaurants for years, culminating as a captain myself. I don't critique in this way easily. But I've had better service at a truck stop. It was frankly a disgrace.
We ate earlier in the day at Boulay, & that was as brilliant an experience as this one was bad. I gather the chef came from Saint Amour. This customer will follow suit.

My husband & I loved our dining experience here. The restaurant was lovely, the winter garden created a beautiful ambiance, the servers were all very professional, friendly & knowledgeable, & the food was incredible in both presentation & flavour. We loved our dining experience & the food so much that we purchased the chef's cook book on our way out. Our server was quite busy with other big tables, so we were slightly neglected by him. We didn't mind too much though because we didn't have anywhere else to be & the other servers & staff took care of us as well. We highly recommend this restaurant & will be sure to return.

Cuisine extraordinaire! Le menu découverte est sublime, les vins de prestiges en vaut la peine, ne serait-ce que pour le Sauternes servi avec le foie gras.
Prenez l'option du foie gras poêlée, l'expérience est inégalable. Le service est exceptionnel. Le saint-amour est une aventure sensorielle & dégustative à vivre & revivre à nouveau. Chef Jean-Luc, bravo pour ce menu d'exception

The best restaurant in Quebec! The menu was seasonal & amazing for my husband, & I am a vegetarian & the chef accommodated this with ease

We 1st heard of Le Saint- Amour while in Montreal- recommended by the chef in a restaurant there. & again by other Quebec locals

Le repas était super & le chef a bien accommodé les restrictions de la personne qui était avec moi. Nous avons pris l'expérience avec l'accord de vin. C'était la deuxième fois que je suis allée & je dois avoué que le service la première fois était meilleure. J'étais dessus cette fois ici parce ce que même si le service était très bien (au niveau d'une expérience) au début il a fini en queu de possion. Nous étions été oubliés à la fin.

Quelle belle expérience culinaire, un beau voyage dans l'univers de ce grand chef. Nous avons pris la découverte des sept services, le foie gras, le flétan, & le gâteau ont été nos coups de coeurs, mais les quatre autres services étaient tout aussi bons. Tout ça avec un service impeccable du personnel dans un lieu magnifique. Très belle soirée Merci

Nous tenons à vous remercier pour l'excellent repas que vous nous avez préparé & servi. Vous & le repas avez surpassé nos attentes qui étaient très élevées avec la réputation de votre Chef. Merci encore & au plaisir de contempler une fois de plus votre magnifique table & votre ambiance irréprochable. Ce fut excellent & nous avons adoré le repas qui était accompagné d'un vin délicieux qui nous a été si bien suggéré. Bref, une ambiance de très bon goût, & une table qui vaut facilement 5 étoiles ainsi qu'une qualité de service irréprochable. Au plaisir de reprendre cette expérience qui sera gravé a jamais dans notre mémoire & notre estomac. Richard & Linda

Bonjour,

Nous avons passé une très belle soirée dans un beau décor & nous avons savouré tous nos plats J'aimerais toutefois faire quelques remarques.

J'ai été déçue par l'acoustique: plus la salle se remplissait de clients, plus il devenait difficile de bien s'entendre à notre table de deux personnes.

De plus, nous avons dû attendre 10 à 15 minutes pour placer notre commande une fois avoir indiqué clairement que notre choix de plats était fait: notre premier serveur a servi plusieurs tables autour de nous sans nous indiquer qu'il était conscient que nous étions prêtes à commander. En fait, on se demandait ce qui se passait, s'il vous manquait des serveurs ou si un autre serveur allait prendre le relais.

Finalement, ce serveur s'adressait à ma mère en l'appelant "ma chère". Pas "ma chère dame", ce qui aurait passer un peu mieux (mais encore). Non, tout simplement "ma chère", ce qui s'approche du "ma petite madame" si condescendant, donc déplacé.

Pour un restaurant de votre classe, nous aurions apprécié un environnement, une attention & un ton à la hauteur de votre réputation.

Cela étant, je dois souligner que la serveuse qui a servi nos plats a fait preuve d'un service impeccable & que le chef nous a impressionnées par son attention en préparant des galettes au sarrasin en remplacement de pain à cause de mon intolérance au blé. Chapeau!
