Founded in 1978 by Jacques Fortier and Jean-Luc Boulay, Le Saint-Amour has become an iconic institution in Quebec City, embodying the influence of Quebec gastronomy. Offering haute French cuisine inspired by exceptional regional products, renowned chef Jean-Luc Boulay and his team combine traditional know-how and modern techniques to pay tribute to local producers and offer a gourmet, refined and unique gastronomic experience.

Le Saint-Amour is ranked among the top 10 favourite fine dining restaurants in Canada by travellers, according to TripAdvisor (2014, 2015, 2016 and 2020 Travellers' Choice Awards). Our wine cellar , housing over 15,000 carefully selected bottles, is also among the top 10 wine selections in Canada, with prestigious vintages from all over the world. Stopped in on a Tuesday evening after a long day of shooting around Old Quebec, & Le Saint-Amour completely reset my mood. The candlelit atrium with its retractable glass roof is genuinely one of the most photogenic dining spaces I've ever sat in, & I kept reaching for my camera between courses. I ordered the foie gras to start & it was so perfectly seared I almost felt guilty eating it rather than photographing it. The staff were warm & unhurried all night, which on a weeknight made it feel like they actually wanted you there.

This was the best foie gras experience I could have asked for. I've never tasted something so good & so tender It felt like I reached flow state, like I had entered a state of mediation where all my problems fell away as I was guided into the present moment through wonderful tastes of savory, & sweet & tenderness! 100 percent recommend 100 percent of the time.

It's a 5-star, especially if you go in expecting proper robust traditional French cuisine. It's not nouvelle by any means. The squab was bold & delicious. The cod was nuanced & clever. The foie gras'experience' was just that. The recommended sauterne was a perfect pairing, & my Pessac-Léognan 2020 from Les Hauts de Smith for the squab leapt out at you! The chocolate tart dessert was perfect. Staff is incredibly knowledgeable & attentive without being cloying or stiff. The atmosphere is of course perfectly on-theme. Our local friend'warned' us that it will be rich & saucy. That was not criticism but compliment. One must go knowing this.

Une de mes plus divines expérience expérience culinaire à vie!

Un repas au Saint-Amour, c'est plus qu'un souper : c'est une parenthèse, un moment suspendu où l'on sent tout le savoir-faire d'une grande maison.

Chaque assiette témoigne d'un respect absolu du produit.
La petite mise en bouche, toute simple en apparence, était un condensé de finesse.
La salade fraîche & parfaitement équilibrée.
Le foie gras, présenté comme une véritable composition, maîtrisé jusque dans les textures.
Le plat principal - cuisson impeccable, jus profond, accompagnements exécutés avec une précision rare. Rien n'est laissé au hasard.
Même les beurres, dont un aux truffles, un au foie gras, servis comme de petites sculptures, méritent d'être soulignés.

Le service, lui, est d'une élégance qui se fait de plus en plus rare : attentif sans être intrusif, chaleureux sans familiarité excessive, précis dans chaque geste. On se sent accueilli, respecté, considéré.

Le dessert, enfin… une finale tout en beauté. Léger, travaillé, équilibré : le genre de douceur qui termine un repas sans l'alourdir, mais qui reste en mémoire longtemps.

Le Saint-Amour porte bien son nom.
On y mange merveilleusement, on y est traité avec une délicatesse exemplaire, & chaque minute rappelle pourquoi cet établissement est l'un des grands restaurants de Québec.

Une expérience qui mérite d'être vécue.

Mon mari & moi y célébrions un anniversaire important, & nous espérions une soirée à la hauteur de la réputation de votre maison. Malheureusement, plusieurs éléments du service ont terni cette occasion.
D'abord, ma bisque de homard m'a été servie tiède, presque froide, bien que le plat de service fût chaud. Cela dit, la qualité des autres mets, notamment la morue, était remarquable & témoigne du savoir-faire de votre cuisine.
L'accueil du maître d'hôtel a été chaleureux & attentionné - un vrai plaisir à notre arrivée. En revanche, le service en salle manquait de cohérence & de professionnalisme. Notre serveur s'est montré plutôt suffisant au moment du choix des vins, au point de nous mettre mal à l'aise lorsque nous avons décliné l'once de Château d'Yquem pour accompagner la terrine de foie gras. D'autres serveurs, visiblement moins expérimentés, semblaient incertains de leurs tâches. Le moment le plus regrettable fut lorsque le livret de la facture nous a littéralement été déposé sans égard, le serveur pressé de passer à une autre table.
Je comprends les défis actuels liés au recrutement du personnel, & c'est dans un esprit constructif que je vous transmets ces observations. J'apprécie vos établissements depuis plusieurs années & souhaite sincèrement que ma prochaine visite reflète pleinement l'excellence qui a toujours fait votre réputation.

Food is okay. I went for seared foie gras. The sauce is a bit too heavy & sweet. Steak was well cooked. The garnish got some herb purée that I'm not used to the earthy taste. Service is really slow. Food comes very slow as well. Bread is cold & I asked additional bread for three times to get it. Took us more than two hours for three courses.

Dinning room is beautiful & unique. Foie Gras Experience is a must. Entrees: scallops were perfect & Filet was a Top 5 ever. Service was well balanced being unobtrusive & attentive through out dinner.

Wow! What a dining experience! My boyfriend & I went in not knowing what to expect. But from the very first bite of our two appetizers to the very last bite of our desserts, we thoroughly enjoyed our meal from their winter menu. Everyone was pleasant & polite & the overall ambiance made our dinner that much more enjoyable. We loved the oysters & caviar, the Foie Gras experience, Halibut fillet, & rack of lamb. A great date night spot & overall dinner spot for people of all ages. If you get a chance to visit Quebec City, this is a must! Also a heads-up, be prepared to spend at least 2 hours here, as is the norm with any fine dining place.

Had dinner here Oct 3, visiting from BC. It's a nice restaurant, but there were a few things I found surprising for a restaurant of this calibre. First, when we got there, there were two tables with young children under the age 5; the sounds of electronic games & fussy children was not what we expected. Our waiter offered us sparkling wine when we arrived which was nice, but only later when you get the wine menu can you see that they are pushing the most expensive of three available by the glass without any explanation ($15-$45/glass). Finally, the foie gras dishes were excellent & my wife really enjoyed her filet. I thought the bluefin tuna was disappointing & meh. We didn't have dessert. Wine selection by the glass is very good.

Nous avons adoré ce restaurant lors de notre visite dans le Vieux-Québec. Ambiance, décor, service, menu varié pour tous les goûts, la grande qualité des plats & une excellente sélection de vins.
