As a former bartender & a current home bartender, it was a little pretentious for me. Most ingredients on the menu are unrecognizable & they only use Québec sourced ingredients in their drinks. That's a great idea actually, if Québec produced better ingredients, to be honest. A bar with no lemons or olives is wild to me. I tried their namesake drink the Vieux Carré & it was ok. I am a big Old fashioned & Manhattan guy but this was a little in between, but without the great bourbon flavor those present, as it was a Canadian rye. My friend ordered an interesting drink with olive oil, pepper & other ingredients. We felt it was very interesting to try, but not something we would want to drink again & definitely not refreshing. Overall the ambiance was amazing & the bartenders friendly & knowledgeable, but the drinks are not great, especially for the high prices. I'd appreciate more classic ingredients, but maybe that's just me...
Part of the Michelin star restaurant, the bar section has good vibe. Staff are friendly & professional. David served us & his kind attitude made our drinks more memorable.
We had Birdie & Vieux Carre from premium list,
We also ordered Cuban sandwich with homemade mustard. It was as tasty & good as ones you get in Cuban, Key West, …
I'd say in our top 5 Cubano we ever had. Drinks are not using natural citrus but using replaced ingredients from Quebec to inmate the flavor, scent, & taste.

Amazing place, great atmosphere & great cocktails. Our waiter knew everything about each coctail & guided us greatly for anything we needed. If you are looking for a great place in old Quebec to enjoy cocktails or a drink thats the one.
A dreamy, cozy, romantic little spot with excellent cocktails & a relaxed low-key vibe. Had the best oysters I've ever eaten; I'm from
New England & lived in NYC for years & have eaten many, many delicious oysters, so this is saying a lot. My squeeze & I went for pre-dinner drinks between Xmas & New Years & just being there made the day feel like a special occasion. We'll be back!
Would recommend. Great speakeasy style bar tucked away inside the restaurant. It's easy to find & the host will walk you there. Bar is a cozy & dimly lit which goes with the vibe of the place. There are a few high top tables & rest of the seating is bar seating. You can also order food here but don't think it is the same menu as the restaurant. The drinks are great & you can tell a lot of thought has gone into creating them - the menu for the cocktails is simple which works perfects but they also know how to make the classics so either way you can't go wrong.
People use the term'speak easy' as a guide to greatness but this bar, well it should be what every speak easy should be measured against. You have no idea the joys that are on the inside by the outside, but once you cross the threshold you are transported both back in time but with an elegant nod to the present & to the farm to table mentality of its parent restaurant down the stairs.
Cocktails which are hand crafted from ingredients & alcohol only from the province. Staff who are personable, educated & articulate.
Drinks that are clever but easy to be around. Not pretentious, classic is the word to use.
Please go, but reserve, it's Quebec City's hidden gem. We will absolutely be back.
