CABU is a friendly place to go for breakfast, just like in the evening, for good food and good drinks.

Whether you're heading out for happy hour before an event in town, or spending the evening enjoying tasty dishes, CABU is a must. Acclaimed Executive Chef Marie-Chantal Lepage, known for her commitment to local produce, presents a constantly evolving menu that lets her expertise and creativity run wild. The culinary experience continues at lunchtime, perfect for a weekday business meal. At the bar, CABU offers a variety of exceptional cocktails made from 100% Quebec spirits. In addition, Thursday evenings are animated by LIVE music, offering customers a festive atmosphere. For birthday celebrations and small groups, the CABU lodge is a semi-private room for up to 30 people.

"CABU" FOR CABOULOT

CABU Boire et manger is named in honor of the "caboulots", small ephemeral shacks erected on the ice of the St. Lawrence River in the 19th century. Before the Quebec Bridge was built, the waters of the river froze, creating a natural bridge. When crossing this ice bridge, locals used to stop off at the little "caboulots" where a merchant would offer edible happiness to help them forget the cold. This transformed the journey into a festive moment.

With over 40 years' experience, Marie-Chantal Lepage has worked in Quebec City's finest restaurants alongside the region's top chefs. As an international ambassador for Québec terroir, she has traveled the world. Among her many awards, renowned chef Marie-Chantal Lepage is the only woman to have been named National Chef of the Year by the SCCPQ. She paved the way for many women in the industry. To this day, she remains the only woman in the province to hold the position of executive chef in a major hotel establishment.

Excellent service courtois & attentionné, très bonne bouffe, très joli décor moderne aux accents artistiques & banquettes confortables & spacieuses disponibles. Seul bémol : l'aire ouverte de la salle sur un lieu de passage des clients de l'hôtel (Hilton) disperse l'attention & fait un peu se sentir au milieu d'une gare… Heureusement, cet inconvénient devrait être remédié d'ici peu au moyen de jolies séparations visuelles!

We had a wonderful dining experience at CABU restaurant in Hilton Québec. Our waiter Krzysztof was extremely friendly, attentive, & professional throughout the moring . He made us feel very welcome, provided excellent service, & always checked to make sure everything was perfect. His positive attitude & attention to detail truly made our visit special. Thank you for making our experience so enjoyable - we will definitely return.

Our family decided to celebrate the last day of the year before Chinese New Year with a meal at CABU during our stay at the Hilton Quebec, & the experience was nothing short of exceptional.

The food quality & taste were outstanding, with every dish exceeding our expectations. The service was impeccable, warm, attentive, & filled with thoughtful suggestions that enhanced our dining experience. The cheesecake dessert was a standout, leaving us utterly impressed.

From the ambiance to the cleanliness, everything was top-notch. We left feeling thoroughly satisfied & grateful for such a memorable meal.

Joli restaurant, mais un peu déçue de voir qu'il fait partie de l'hôtel Hilton, ce qui n'était pas précisé lors de mes recherches.
L'endroit manque d'intimité, avec beaucoup de bruit provenant des clients de l'hôtel.
En revanche, le service & la nourriture sont bons.

Même si vous ne séjournez pas à l'Hilton, faites donc un détour par leur bar. J'y ai dégusté le meilleur Long Island Iced Tea de ma vie. Dosage juste, accord parfait, ça goûte vraiment le thé glacé ! Un petit moment de haute mixologie. Mon daiquiri à la fraise, précédant cette merveille, était somptueux ! Endroit immanquable pour les amateurs de beaux produits - avec modération, bien sûr ! Merci à mon mixologue/barman favori, Brandon!

We ended up staying in & eating at CABU during our stay at the Hilton Quebec because of the rainy weather & to my surprise the food was AMAZING. Nothing negative to say at all. The quality + taste of the food, service, & ambience was much better than anticipated, & exceeded my expectations. Thank you, we will be back!

For a regular buffet is is great but for a high end hotel, ie Hilton, one should expect better selection. The coffee is only drip, no expresso. Orange juice & fruit juice are all commercial. The knife to cut the bread is past its useful life, it doesn't cut anymore. I know it's a detail but it's almost unrespectful for costumer to have to use a bread cutting knife that you might find at value village... the server was the highlight of the experience here. All in all it's OK, bacon was ultra thin, & cold, French toast do not represent what a real French toast is in Quebec. Was there maple syrup? I didn't see any

Nous sommes allez souper en famille au restaurant . Un service exceptionnel, la nourriture exceptionnelle. La serveuse Sophie & superbe , l'hôtesse a la porte merveilleuse. Je recommande fortement . Bravo . Sans oublier Isabelle qui nous as accueilli à l'entrée principale du Hilton . Un gros Bravo .

I was pleased by this gourmet level restaurant housed in the Quebec Hilton. All the dishes were made with the highest quality ingredients.
Our waiter Benoit provided excellent service & recommendations.
Be sure to check out the desserts. Amazing!

Disappointing establishment within Hilton Quebec. Let's start with pros. Great atmosphere & beautifully decorated. Most of the dishes we had were great. Not the best but we did not have any expectation of amazing culinary experiences as the place has small selection of dishes. Good enough for a nice meal after a long travel day & reasonable pricing (our view). How bad can it be if it's part of Hilton chain. The CONs & where do I even start. Our servicer was clearly overwhelmed & need help. Multiple large parties to serve & more diners coming in. She was great in talking to us when we get seated. After that everything went down hill. One hour after seating, our dishes were served. No bread, no refill of water, no hi sorry for the long wait....SILENCE!!! A few tables came way after us were served with their orders, drinks & bread by another servicer but not us. NO one came to check on us. We sit there for an hour watching people around us being served & we got nothing. I would love to be rude & not tip at all but I was taught better than that. This experience is so personally insulting that we felt, for the first time in our lives, that we were discriminated upon. Seriously how can one feel when the servicer gave every table around you bread & butter & refill of water but skipped over your table multiple times!!! We have traveled the world with 60+ countries under our belt & never once did we feel so horrible at dinner. Never again!
