CABU is a friendly place to go for breakfast, just like in the evening, for good food and good drinks.

Whether you're heading out for happy hour before an event in town, or spending the evening enjoying tasty dishes, CABU is a must. Acclaimed Executive Chef Marie-Chantal Lepage, known for her commitment to local produce, presents a constantly evolving menu that lets her expertise and creativity run wild. The culinary experience continues at lunchtime, perfect for a weekday business meal. At the bar, CABU offers a variety of exceptional cocktails made from 100% Quebec spirits. In addition, Thursday evenings are animated by LIVE music, offering customers a festive atmosphere. For birthday celebrations and small groups, the CABU lodge is a semi-private room for up to 30 people.

"CABU" FOR CABOULOT

CABU Boire et manger is named in honor of the "caboulots", small ephemeral shacks erected on the ice of the St. Lawrence River in the 19th century. Before the Quebec Bridge was built, the waters of the river froze, creating a natural bridge. When crossing this ice bridge, locals used to stop off at the little "caboulots" where a merchant would offer edible happiness to help them forget the cold. This transformed the journey into a festive moment.

CHEF MARIE-CHANTAL LEPAGE - BIO

With over 40 years' experience, Marie-Chantal Lepage has worked in Quebec City's finest restaurants alongside the region's top chefs. As an international ambassador for Québec terroir, she has traveled the world. Among her many awards, renowned chef Marie-Chantal Lepage is the only woman to have been named National Chef of the Year by the SCCPQ. She paved the way for many women in the industry. To this day, she remains the only woman in the province to hold the position of executive chef in a major hotel establishment.

We ended up staying in & eating at CABU during our stay at the Hilton Quebec because of the rainy weather & to my surprise the food was AMAZING. Nothing negative to say at all. The quality + taste of the food, service, & ambience was much better than anticipated, & exceeded my expectations. Thank you, we will be back!

Mais quelle expérience ! Commençons par la nourriture. Les huîtres. Parfaites, fraîches, grasses & goûteuses. La petite sauce aux agrumes? Parfait agencement. La pieuvre. 12/10. Tendre & exquise, & les sauces en accompagnement m'ont séduite ! Le service maintenant. Nicolas était extraordinaire. Malgré l'achalandage, il a pris le temps de m'expliquer les plats, les accords mets vin & bonus, a amener sa petite touche d'humour & a agréablement enrichi mon expérience. C'est dorénavant un incontournable pour moi à Québec. Bravo !

Accueil très sympathique & bon service. Nous avons très bien mangé. Une attention pour les enfants. Les prix sont corrects & l'ambiance très agréable. Nous étions à l'hôtel & y avons finalement mangé 2 fois sur 3 nuits. Pratique & bon.

Vu la température extérieur nous avons opté de souper au resto de l'hôtel (côté bar). Belle ambiance sur une belle banquette & nous avons été servi par la belle jeune fille Kamiange. Une belle rencontre humaine & un repas parfait pour ce que nous voulions. Merci de ton service Kamiange.

Première visite au comptoir-bar. J'y suis arrivé sans attente & suis reparti ravi! Dire que j'ai été agréablement surpris serait un euphémisme!
Sur le conseil avisé du barman Brandon-Luc, j'ai succombé pour le « 100% noisette », proposition du menu récemment refondu. Quelle merveille! À essayer sans hésitation!

Our waiter Benoit was very accommodating & welcoming. We were pleasantly surprised by the quality of the food. The chicken pompadour deserves at least a 4.5. Chicken breast was tender & moist, & past was aldente. A touch of truffle oil or shaved truffle would give it a solid 5. PEI oysters were fresh & delicious. Caesar salad was good. Would have liked the fried Parmesan ? cheese to be crispy . The atmosphere could be greatly improved to match the quality of the food. No Pompadour pics. Dug in right away. The Portuguese wine was a nice addition.

Notre serveuse était tellement gentille & aimable! Elle mérite ses 5 étoiles. Elle nous jasait comme si on se connaissait depuis longtemps. Un gros Wow. Le buffet était très bon avec beaucoup de choix. La fraîcheur des aliments & le pain ménage était succulent!
