Sapristi Champlain specializes in traditional Italian culinary techniques with a focus on artisanal stone-baked pizzas and house-made pasta dishes. The kitchen utilizes fresh, seasonal ingredients to create authentic flavor profiles across a diverse menu of Mediterranean-inspired offerings. Guests encounter an atmosphere defined by industrial-chic aesthetics, featuring exposed brick walls and high ceilings that highlight the bustling culinary environment. A dedicated pizza station serves as the central focal point, showcasing the high-temperature oven methods required to achieve a distinctively charred crust. Varied seating configurations accommodate groups of different sizes, ensuring a functional layout for social gatherings. Consistent culinary standards reflect a commitment to classic preparation methods while maintaining a contemporary approach to casual bistro dining in a prominent urban setting.
Sapristi Champlain is praised for fresh Italian cooking, especially pizzas and pastas, with many dishes described as delicious and well presented; the ambiance is warm, the location in Old Quebec is convenient, and the value is generally good for the area. Gluten-free options are noted by several diners, and quick takeout on weekday evenings is a plus, but experiences vary with some mentions of small pizzas or toppings that pull away from the crust and inconsistent or busy service at peak times.

Go here if you like cold pasta & dry pizza for 50$. All the cheese & toppings in pizza comes ripping off the crust in first bite. Expect to pay a tip for nothing exceptional in service.
We had an amazing experience at Sapristi during our visit to Quebec from Miami. From the moment we arrived, everything was excellent. Since we don't speak French, we were relying on a friend to translate for us, but then the waitress heard us speaking Spanish & introduced herself as Virginia, letting us know she also spoke Spanish. That immediately made us feel welcome & comfortable.
Virginia's service was truly 5 stars - she was kind, attentive, professional, & made our experience even more special. The food was phenomenal, full of flavor, fresh, & beautifully prepared. Every dish exceeded our expectations.
If you're visiting Quebec & looking for authentic Italian food with outstanding service, we highly recommend this place. Thank you, Virginia, & the entire team at Sapristi for such a memorable evening!
The service was disappointing-the server was unfriendly & didn't even crack a smile. The French onion soup arrived lukewarm, & the calamari was cool with an overly thick batter, while the squid itself tasted fishy. The cheese pizza was mediocre, at least it was hot, but it was watery & soggy, though the crust was decent. Overall, I wouldn't recommend this restaurant.

Very quick takeout pizza on a weekday evening. I loved the 1608 pizza, & the chorizo & fig was decent (though sweeter than I'd prefer due to the candied pecans--I'd order it again with fewer pecans).
We ordered a margarita pizza & a mushroom pasta. We asked for no pine nuts on the pasta, the pasta came with pine nuts (I'm severely allergic) & we decided to let it go & my wife had the pasta. The pasta has too much Parmesan in its base sauce & was very acidic. The pizza's crust was super nice & thin but it lacked a bit of pizza sauce & felt bread-y.
