I really don't know where to begin. 5 stars does not do Taniere justice. We have dined at top restaurants around the world but nothing compared to our experience at Taniere. & I use the word experience carefully, because it truly was an experience. From the time you use your secret code to enter their unmarked door into their incredible space, everything is perfect. Greeted by name, correctly pronounced (yes they do research it & all staff know it). Physical space is fabulous as you move between the 3 rooms of their underground 1600ish building. Seasonal food themes were incredible. Not sure how many dishes (some were just bites) we had but must have been 15+.I am not one to take pictures of my food, but these plates were certainly picture worthy. Wine pairings worked perfectly. As others have said, Taniere will most definitely be up for a Michelin star when they come to town. It is pricey, but worth it. We chose it for a special occasion & it ended up being the highlight of our trip to QC.

In my opinion, Tanière³ isn't just one of the best restaurants in Quebec City; it's one of the best in Canada. Every aspect of the dining experience has been meticulously designed to create a culinary journey beyond imagination. The experience unfolds across several rooms, each offering a unique ambience, creating four distinct dining experiences. The seasonal menu is stunning, with every dish thoughtfully prepared, blending flavours, textures, & temperatures in perfect harmony. The creativity & presentation of each dish are truly astonishing. The wine & cocktails are equally exceptional. There's also something magical about dining in a 1500s-era cellar with vaulted ceilings, adding to the overall enchantment of the experience. I would be remiss not to mention the personalized touches that elevate the experience even further. Each diner receives a customized menu & cards, adding a special, thoughtful touch to the meal. This is an exceptional dining experience in every sense & should not be missed. Tanière³ more than earns its numerous awards & accolades, including being named the best restaurant in Quebec at the 2024 Lauriers de la Gastronomie Québécoise Gala & its prestigious CAA-AAA 5 Diamond rating. This level of recognition speaks to the exceptional quality & creativity of the dining experience offered. When the Michelin Guide eventually comes to Quebec, there's no doubt that a Michelin star will be in Tanière³'s future.

Une belle expérience pour marquer un anniversaire, un événement dans nos vies. Rien à dire sur l'endroits , les produits, le service, digne d'un etoilé Michelin sans aucun doute . Je voulais marquer l'enterrement de mon père , j'avais besoin d'être seul & juste de me laisser aller, bref mon choix du judicieux !

L'endroit parfait si vous désirez vivre une expérience gastronomique, artistique & sensorielle hors du commun. Parfait pour les grandes occasions ou juste pour le plaisir de vivre une expérience gastronomique immersive. Le service est impeccable & attentionné & le décor contribue parfaitement à l'ambiance. Il faut savoir qu'il n'y a pas de menu & pas de choix à faire. Il s'agit d'un parcours gastronomique exécuté en 7 services accompagné de mises en bouche & de délicates attentions. Le menu implique qu'on apprécie le mariage délicat des saveurs. Le grand succès de cette expérience repose sur un dosage judicieux des quantités & des saveurs. Les portions sont justes parfaites & conséquentes du nombre de services. Même chose pour les vins. Bref, on ne ressort pas en état d'ébriété, ni sur le bord d'exploser & ni avec le goût d'aller manger d'autre chose. L'accord mets/vins vaut vraiment la peine car il permet d'avoir un mariage parfait entre les plats & la boisson. Il y a même un service conçu en fonction du vin. Dans ce cas, c'est le plat qui accompagne le vin dans une fusion sublime & subtile. Le menu est grandement inspiré du terroir québécois, ce qui le rend encore plus unique. Nous avons pris quatre heures pour vivre ce parcours merveilleux & il faut prévoir environ 900$ canadiens pour deux personnes avec l'accord met/vin. Évidemment, le prix est conséquent & équivalent à n'importe quel restaurant très haut de gamme. Par contre, La Tanière3 rivalise & surpasse bien des restaurants européens étoilés Michelin où nous avons déjà mangé.

However, they are all Michelin's idea of what a highest quality restaurant should be. Tanière³ goes beyond those standards! Chef François-Emmanual Nicol & Dining Manager Rocan Bourdelais created a visionary experience that includes not only the highest levels of culinary art & service, but incorporates a commitment to the history, culture, & culinary ingredients of the Québec region, area, & community - all delivered expertly by their exceptionally talented brigade of Chefs & other talented staff! Each course is visually alluring & filled with multiple regional flavors & textures that differ with each plating & the pairings complement each dish perfectly! All the brigade is approachable with a feeling of congenial familiarity, & together they weave the story of Tanière³'s vision into each course, exciting not only your eyes & palate but your mind & imagination as well! The Team of Tanière³ deliver at a level that is certainly deserving of the recognition & accolades that Michelin brings with it, but by committing to their own vision, their region & community, & the gastronomic culture of Québec they deliver so much more than those one, two, or three stars can ever signify!

Ne mangez pas avant d'y aller, les 16 services vous comblerons la panse & les papilles. À ma mort, je me souviendrai de mon mariage & de ma soirée à la tanière.

We've traveled around the world, & we always try to get a little bit of everything. We try street food, local dishes & in some occasions we get ourselves a treat. In this case La Tanière is probably THE best experience I have ever had. From the hidden spot, with the personalized key to get in the restaurant, to the finest attention you could ever have. Everything is calculated from the place you sit, the dishes, the pairing flavours & the overall experience is spectacular. Yes, it is expensive, with alcohol you can expect to pay around $1000 for two people. But it is the experience of a lifetime. I've had a Michelin Star restaurant in Marseille, some fancy rooftop restaurants in Miami, & some dazzling restaurants in San Francisco, & this one is ranking near the top.

Quite possibly the best dining experience I've ever had. I have done Michelin starred tasting menus at a couple places around the world & this is at the top. I won't post pictures of food since I think they like to keep that a surprise, but I'll post pictures of the interior which were wholly unique & immersive. The staff were very accommodating to my allergies & my wife's pregnancy. They ran down the list of what would be okay for my pregnant wife & what would not. That was very much appreciated. Of course the food was delicious & so creative but I won't say too much so as not to ruin anything. If I am ever in Quebec City again, I will definitely stop by again.

I was very, very happy to be able to reserve a spot here just a week in advance. Michelin is not in Quebec City, but if it was, Taniere would surely get 2 or 3 stars. It was an experience from top to bottom. To begin, once a reservation is made, you will receive a secret door code for entry into the unassuming, unmarked yellow door outside. Once within, you immediately descend into a forested vault that was built 500 years ago. The sounds & smells of the forest fill the air. We were greeted by name once we made our way through the woods to a desk where we gave up our coats. Afterward, we were led into the first room where we are told about the experience & choose our drink pairings for the night. I chose the Wine Experience, & Shahrzad chose the non-alcoholic, which was phenomenal. We were also served our first series of courses. Next, we moved to the main dining vault past the Chef's Table, which you can also reserve if you are lucky enough. There, you can watch everything being created. Once seated at our table, we were each given two small antique keys that open two drawers on each side of the table. These drawers contained a personalized card with a poem hinting at the signature dish, Noble, as well as our napkin & utensils. Here in the main vault, we were served our next 7 courses. Two of these courses might be the best dishes I've ever had in my entire life. Each dish is brought out by 2 servers who deliver it to the table in perfect sync. Another member of the staff describes each dish, the ingredients, the inspiration, & the sources, which are all local to Quebec. Every part of each dish is sourced locally. If you can't get it in Quebec, it's not used in the dish. That includes things as common as olive oil & as popular as chocolate. About 2 hours into the experience, with 15 courses down, we are moved to the final room for dessert. This room is filled with trees, both sculptural & real. The ambiance is different, & the space is suited for wrapping up the journey they took us on. Here, we receive the final 6 dessert courses as well as dessert drinks. What an incredible 3 hours. This was the top dining experience I've ever had, & a few of these dishes were the best I've ever had. The entire 3-hour dinner truly was an experience from the moment we arrived outside to the moment we found our coats waiting for us outside the final room. The attention to every last detail in the food, the dishes, the space, the service, everything was perfect.
