What an amazing evening from start to finish. I would easily say this is the best restaurant I've had the privilege of trying in Canada. From the moment we were greeted in the first room to start the evening with appetizers, then guided through a two more rooms with mains & desserts, everything felt special.
We truly were blown away with the amount of thought & work put into the non-alcoholic pairing. Unlike many other places where it feels like an after thought of kombuchas & juices, these were carefully created to pair with each service & had a vast range of tastes & textures.
Service & the staff were very professional while being warm, welcoming & friendly.
The only tip I would recommend is arriving early as it is located in an area with limited parking, during peak seasons it may be challenging to find a spot.
Dining at La Tanière was an experience to say the least. The care & selection in highlighting all locally sourced ingredients from within the borders of Quebec was impeccable. Truly a wonderful experience & story behind the restaurant, the food & it's location. Getting to experience new ingredients & fruits that I had no idea even existed in Canada was a great surprise. The creativity involved in every dish that Chef François-Emmanuel presented was… chef's kiss. From the beginning with the variety of amuse bouches & accompanying aperitif, giving a wonderful sneak peak into what is yet to come to the very end with the assortment from their patisserie was very thoughtful.
From start to finish, moving through the meal elevated the experience for me. Dining at the chef's counter gave an wonderful insight into the chefs creativity & cooking. I enjoyed watching the flow of the kitchen. Simon who was my CHO (Chief Hospitality Officer) provided excellent service in guiding me throughout the meal. His patience with my curiosity was well received & he provided great insights in regards to the ingredients & the story behind the pairings.
I was very impressed with their signature dish: the rainbow trout cooked in clay, the cook & attention to detail was phenomenal. Each piece on the dish were so complimentary it was hard to put down. The wine pairings as well were very well curated. Each glass paired nicely with each dish.
The best pairing of the night however was the caviar crème brulée with whiskey, although it was not a main entrée & was simply a palette cleanser. I know Simon saw some my dismay at the pairing but assured me that it would pair well, trust the process. & trust I did, while unconventional & I would not have thought to pair Whiskey with this, it was surprisingly mouth melting. The caramel flavour in the Whiskey really complimented sweetness of the crème brulée with the saltiness of the caviar. I found this was more thoughtful & flavourful as a course between dinner & the dessert.
If I had to find a fault in the entire experience, I would have to say it might be the bread although it was still pretty good, but that has nothing to do with the experience or the meal, in my opinion it is just as a note aside.
Never had I ever felt more proud to be Canadian than my experience dinning at La Tanière. I will be coming back again to see what else the chef can come up with next (especially in winter, even though I know he mentioned how much harder it is then with the limited ingredients). But I am very certain that his creativity will continue to impress.
From start to finish, the food & service were exceptional as we moved through three vaulted rooms. Every dish was thoughtfully prepared, beautifully presented, explained in detail, & full of flavor. The wine pairings complemented each course perfectly. I usually prefer full-bodied reds, but after a Chardonnay pairing, I'll be buying that bottle. The staff truly elevated the experience, attentive without being intrusive, knowledgeable about the menu, & genuinely welcoming. I left impressed, extremely satisfied, & will definitely return next time I'm in Quebec.

As far as I'm concerned my experience with Tanière³ began prior to entering the front door. The energy was undeniable as I made my way down the stairs & the view once I entered into the actual dining experience was breathtaking. I don't think there is anywhere in Canada that provides such an alluring stage for fine dining enveloped with such breathtaking history.
Architecture that has stood the test of time - perfectly complimented with modern additions. Tanière³ has mastered enhancing the historical venue while bringing it to modern day.
Each room that I sat in throughout my dining experience was pure harmony.
My husband & I embarked on an experience to dine at the Chef's Counter with another couple, we were greeted at the entrance with warm, personable professionalism, which never faltered. Everyone worked seamlessly together, the transitions were impeccable. Whether it was the movement of a chair, a cup, providing directions to the restroom - for myself & other attendees it was evident everywhere I looked an observed. Flawless professional, KIND consistency. The descriptions of each dish were enchanting - the passion radiated from each different individual presenting the dish they prepared (which I loved that we saw the creators of the dish!)
We had the opportunity to view the kitchen & shared some brief conversation which demonstrated yet again the kind consistent professionalism.
As we sat at our table overlooking the kitchen & viewing the different dishes being prepared it was amazing. My husband & his brother opted to do a pairing that involved some incredibly unique choices that perhaps could be considered once in a lifetime. Myself, & my sister-in-law opted for mocktails. Simon the mixologist for Tanière³ is undeniably gifted at his craft, & it was sincerely enjoyable to watch his presentation of each bottle & drink (I don't even speak French & for the parts spoken in French to our other group attendees I was equally captivated) The explanations I received for my pairing filled me with eager anticipation to tasted his divine creations. Perfection - every time. Pairing & creating for 18 courses flawlessly - let that set in.
The genius of Chef François-Emmanuel Nicol, was just astounding, although I was provided descriptions in English for each dish, the explanation in French felt like they were crystal clear because of how much you could feel as he spoke. There was no detail overlooked, each dish was so invigorating for our palate & our group of 4 could not get enough! We continuously asked how is it possible simply match each dish we tasted prior... yet every dish that came was equally unique & incredible . The flavors were in perfect harmony even when they juxtaposed each other - incredible. Genius. There was no denying the breathtaking details of each dish. The ingredients were woven into art & it was such a delight to partake in it.
I've been fortunate to experience an assortment of high calibre restaurants, however my experience at Tanière³ was incomparable. It was such an honor to experience the talents of Chef François-Emmanuel Nicol, Simon Faucher & the entire team that made this experience one I will cherish for a lifetime

An experience. Everyone I spoke to said Tanière was about more than just the food. & they were right. It was the most complete dining experience I've had in North America. Exceptional cooking, thoughtful presentation, creative/local ingredients, warm hospitality, & a coherent story that ties everything together.
The evening began enigmatically. I entered a door code, descended into what felt like an underground vault, & arrived at a speakeasy-style lounge. After a few small bites there, I was escorted into the main dining room (the chef's counter). With the low light, heavy wood, & intimate setup, sitting at the counter felt like gathering for a secret meeting in a medieval chamber. One of the perks of the chef's counter was the clear view into the kitchen, & more importantly, being served directly by chef-owner Nicol for several of the main courses.
Food-wise, there wasn't a single miss. Despite nearly 20 small bites & dishes, nothing felt repetitive in concept or flavor. I visited at a perfect time for Canadian seafood, with prime ingredients from the coasts & the St. Lawrence River like bluefin tuna & scallops.
The dry-aged bluefin tuna may have been the best seafood dish I've ever had. Each bite was packed with deeply concentrated umami, enhanced by bright, fruity notes of plum & blackberry. What elevated it further was the non-alcoholic pairing, which echoed one of the dish's core flavor notes & reinforced the overall composition rather than competing with it. This approach applied through the rest of the menu. The pairings consistently mirrored a central element of each dish, which added depth without sacrificing creativity or flavor.
Dessert was also impeccable. The corn madeleine, corn cannoli, & popcorn reimagined one of Quebec's most pedestrian crops into something playful yet refined.
Among the dozens of Michelin-starred meals I had last year, this was undoubtedly in my top three. Would definitely be back to try their other seasonal tasting menu.
This really is the standout dining experience in Canada & it definitely can go toe-to-toe with some of the three stars I've tried. The experience is incredibly curated & has excellent timing & flow. The dishes were very creative & Canadian through & through. I opted for the cocktails over the wine pairing based on my mood. All of them were creative & interesting with the standout being the slushie at the start of the experience & their'Baileys' drink at the end. The creativity is seen in all aspects of the experience. From the food, the pine trout prepared in clay was the standout for me. Sebastien made the chefs counter experience very memorable! I would come back to Quebec City specifically to go here again.
Incredible restaurant. Best in Quebec, & potentially Canada. I won't spoil the experience, but everything is on point: atmosphere, ingredients, texture, presentation, etc. We were 3 & had one normal, one premium & one non-alcoholic pairings to taste them all. All were incredible!
