Notre cuisine prend vie grâce à un réseau de partenaires passionnés. Cinq cueilleurs, répartis dans des régions distinctes de la province, nous offrent un accès privilégié à la richesse des plantes sauvages québécoises. Nos viandes proviennent exclusivement de fermes sélectionnées avec soin, selon des critères de bien-être animal et de respect de l’environnement. Quant aux légumes, ils sont cultivés par un ami d’enfance du chef, avec qui il choisit personnellement les semences chaque hiver — un geste simple, porteur de sens.

Dining at Tanière³ was one of the highlights of our trip to Québec City & easily one of the finest dining experiences we've had.
From the moment we arrived, it was clear this was going to be much more than just dinner. Every course showcased the incredible ingredients that Québec has to offer, with an obvious commitment to local sourcing & respect for the region. What made the meal especially memorable was that each dish came with a story. The team explained where the ingredients were sourced, how they were harvested, & the thought behind each preparation, which added another dimension to an already exceptional meal.
The atmosphere was intimate, relaxed, & incredibly unique. The tasting menu was creative without ever feeling pretentious, & every course was beautifully presented & absolutely delicious. The wine pairings were equally impressive, with each selection thoughtfully chosen to complement & elevate the flavors of the food.
What truly set Tanière³ apart, however, was the service. Every member of the team was warm, welcoming, knowledgeable, & genuinely passionate about what they do. We especially appreciated Rose, who went out of her way to answer our many questions with patience, enthusiasm, & a smile. She made us feel like honored guests rather than just customers.
Tanière³ delivers an experience that is as memorable as it is delicious. If you're visiting Québec City & appreciate exceptional food, outstanding hospitality, & a true sense of place, this is a restaurant that simply shouldn't be missed.
Dining at La Tanière was an experience to say the least. The care & selection in highlighting all locally sourced ingredients from within the borders of Quebec was impeccable. Truly a wonderful experience & story behind the restaurant, the food & it's location. Getting to experience new ingredients & fruits that I had no idea even existed in Canada was a great surprise. The creativity involved in every dish that Chef François-Emmanuel presented was… chef's kiss. From the beginning with the variety of amuse bouches & accompanying aperitif, giving a wonderful sneak peak into what is yet to come to the very end with the assortment from their patisserie was very thoughtful.
From start to finish, moving through the meal elevated the experience for me. Dining at the chef's counter gave an wonderful insight into the chefs creativity & cooking. I enjoyed watching the flow of the kitchen. Simon who was my CHO (Chief Hospitality Officer) provided excellent service in guiding me throughout the meal. His patience with my curiosity was well received & he provided great insights in regards to the ingredients & the story behind the pairings.
I was very impressed with their signature dish: the rainbow trout cooked in clay, the cook & attention to detail was phenomenal. Each piece on the dish were so complimentary it was hard to put down. The wine pairings as well were very well curated. Each glass paired nicely with each dish.
The best pairing of the night however was the caviar crème brulée with whiskey, although it was not a main entrée & was simply a palette cleanser. I know Simon saw some my dismay at the pairing but assured me that it would pair well, trust the process. & trust I did, while unconventional & I would not have thought to pair Whiskey with this, it was surprisingly mouth melting. The caramel flavour in the Whiskey really complimented sweetness of the crème brulée with the saltiness of the caviar. I found this was more thoughtful & flavourful as a course between dinner & the dessert.
If I had to find a fault in the entire experience, I would have to say it might be the bread although it was still pretty good, but that has nothing to do with the experience or the meal, in my opinion it is just as a note aside.
Never had I ever felt more proud to be Canadian than my experience dinning at La Tanière. I will be coming back again to see what else the chef can come up with next (especially in winter, even though I know he mentioned how much harder it is then with the limited ingredients). But I am very certain that his creativity will continue to impress.
From start to finish, the food & service were exceptional as we moved through three vaulted rooms. Every dish was thoughtfully prepared, beautifully presented, explained in detail, & full of flavor. The wine pairings complemented each course perfectly. I usually prefer full-bodied reds, but after a Chardonnay pairing, I'll be buying that bottle. The staff truly elevated the experience, attentive without being intrusive, knowledgeable about the menu, & genuinely welcoming. I left impressed, extremely satisfied, & will definitely return next time I'm in Quebec.

Probably amongst the best meals I have ever had. We had just had dinner at a fantastic restaurant the night before & this topped it. From start to finish everything was perfect. The service is exceptional, the dishes artfully crafted, beautiful & absolutely delicious. It was a phenomenal experience & one that we will remember for a long time. For a 2-star Michelin meal WITH accompanying flights of wine & custom non-EtOH cocktails the price was a great value too (it *is* expensive, but not crazy expensive when compared to other restaurants at same level). We will definitely return!
This really is the standout dining experience in Canada & it definitely can go toe-to-toe with some of the three stars I've tried. The experience is incredibly curated & has excellent timing & flow. The dishes were very creative & Canadian through & through. I opted for the cocktails over the wine pairing based on my mood. All of them were creative & interesting with the standout being the slushie at the start of the experience & their'Baileys' drink at the end. The creativity is seen in all aspects of the experience. From the food, the pine trout prepared in clay was the standout for me. Sebastien made the chefs counter experience very memorable! I would come back to Quebec City specifically to go here again.
Wow. Just wow. My fiancée & I had her birthday dinner here, & days later Tanière³ got its two Michelin stars. I'm not surprised at all - they absolutely earned it! This was easily the best meal I've ever had in Canada, & I've been to a lot of top spots.
The whole experience starts with this cool sense of mystery, showing up to a yellow door & using a code to get in. Right away, I knew this was going to be special. We started in the'first vault' with some incredibly tasty mocktails & amazing small bites. Then, after a quick peek into the back kitchen, we moved to the'chefs counter vault' for the main event.
Honestly, it's hard to find the words to describe how good everything was. Every single dish was a 10/10 - no misses, nothing that was just'good but not great.' The amount of thought they put into sourcing, preparing, & presenting each part of the meal is just perfect. Chef François is a true master, & you can feel his passion when he explains the dishes; he's not just reciting a script. All the staff were fantastic too, super attentive & seemed to know what we needed before we even had to ask.
We did the wine pairings (highly recommend with a tasting menu like this). They have two options, the'Experience' & the'Collection.' Hot tip: if you're there as a couple, get one of each. You get to try way more, & it was cool to see the difference - like tasting a 2017 French Pinot Noir next to a 2023 Quebec one.
We finished up in the'dessert vault,' which had this amazing ceiling covered in paper hummingbirds - a really special touch for my fiancée. The desserts were out of this world & the perfect end to an incredible night. The whole dinner was about 3 hours, but it was paced perfectly. We never felt rushed or like we were waiting around.
Seriously, I'd 100% recommend travelling to Quebec City just for Tanière³. It's not just dinner; it's a whole experience. If you want the absolute best of Canadian dining, this is it.
Absolutely incredible dinning experience. Words can hardly describe how perfectly curated everything was. The rooms, service & most importantly, the food were unbelievable. Every single ingredient is locally sourced & succinctly described. Fantastic & unique wine pairings. One of the most memorable gastronomical experience of my life. Bravo!!!
Wow! Restaurant Tanière deserves all the praise lavished by reviewers & then some. Similarly to other reviewers, we have eaten at many highly credentialled & starred restaurants, & can endorse that this meal & experience is on par with the best of the best. The use of native & locally-sourced ingredients was imaginative, balanced & unforced, the flavours were highly novel yet still delicious, & the experience engaging without over-pretention. The premium matched wine was expertly paired & very reasonably priced. Overall, an experience well-worth travelling a long distance for - reserve while you can, before it receives Michelin endorsement!
