So much had been written about this French restaurant in Quebec City, the heart of French Canada. I won’t rave as many reviewers do. We went to experience something different, & we weren’t disappointed. But there are caveats. There is no doubt that Taniere is a premiere example of a French restaurant combining the best elements of Haute & Nouvelle Cuisine. Exquisite presentation in a historic old & comforting environment. Detailed explanations of each course by a trained & dedicated staff. Extraordinary, enjoyable, & an experience well worth the time & cost. But yet---not the best my wife & I have experienced in our world travels. We still revel in & prefer classical cooking & presentation.
I’ll only describe a few of the 14 courses in our meal. We started with an elderberry cocktail followed by 4 hors d'oeuvres centered on duck, walleye (fish), pig flank, & trout eggs. All were in Haute/Nouvelle portions which, we decided, could be sized by ‘bites’ (forgive us, we were having fun). Each hors d'oeuvre was one bite plus another for the accompaniment (like water pepper with the pork & immature catkins with the walleye). The seven ‘main’ courses ranged from ‘9 Shades of Tomatoes’ (9 combinations of different tomato types with spices & condiments-9 bites), to spruce grilled Arctic Char in a caramelized sauce (2 bites), to a 2 bite slice of Wagyu Beef with a sauce containing goldenrod & mushrooms (2 more bites). Dinner was followed by 2 dessert courses (6 bites total).
The dinner from hors d'oeuvres to dessert took 3 hours & we were moved twice to a new location in the cellar restaurant (hors d’oeuvres lounge to the main dining room to the more casual dessert room). Nice effect to separate the three parts of the meal.
The one downer in the presentation of the various dishes was the detailed & critical description of each. It may be unfair, but the description of each dish by our server was lost quickly at its rapid fire delivery in French-English. While a description of each course was provided to us in a menu we received after the meal was done, each course was stated in just a few words in that menu. A more detailed description, as told by our server, would have added to the educational value of the meal.
Finally, the cost of the experience cannot be ignored. My wife’s & my meal, plus a bottle of wine, plus tip cost over $550. Had we opted for the wine pairing at we would have paid over $700. If you want to sit at a bar surrounding the chef & watch him prepare your food, add another $50 per person. Was it worth it? Yes, 4 stars for the food & 5 stars for the total experience.
Culinary paradise found! My wife & I have had the privilege of dining in some of the best restaurants in the world, including numerous Michelin starred restaurants & this was the best dining experience we have enjoyed. The service, the ambiance, the wine offerings & especially the food were all 5 star!. We were treated to over 15 different food experiences from flora, fauna & the sea. We savored scallops, arctic Char, lobster, lamb, venison each in a generous bite or two. Even the dessert selections ran the spectrum from delicious to out of this world. If you are blessed to have the opportunity to visit Taniere don't delay. It is Nirvana & Valhalla in the foodie world!
This was one of the adventurous foodie experience I have come across. Very exciting.
The venue was fantastic, a historic building, a cellar, in the heart of Old Quebec, with access through a yellow door, no signage, just a code, which you receive the day before your reservation.
Inside, we were greeted & sat in the first area, to enjoy pre dinner drinks & appetizers. The presentation was amazing & we enjoyed small plates of daring creations which were such a treat. At this point, we were offered the drink options which were premium wine pairings, the non-premium wine pairing & the non-alcohol drink pairing. We went with the non-premium, which is the only mistake we made, we should have taken the premium pairing as that was a bit of a disappointment for us.
On to the next cellar, the main course, again, super exciting small plates, the tables with drawer & locks to hint on our next dish. So creative, local fish & lobster, sturgeon caviar from New Brunswick, lamb, I don’t want to give away the whole menu but the flavours…I was in my element.
It was one adventure after the next, the dessert served in yet another area in the cellar, a brighter section tastefully decorated with birch trees. We then had a chance to chat with other patrons, who agreed, it was an experience they would never forget.
Since we arrived home, we have told many of our friends about our adventure there, have showed pictures & the menu card.
I had made my reservations months ago, when I made my hotel reservations. After research, Taniere seemed to top the list & I understand why.
This is a must experience while in Quebec City.

I was initially concerned about the wine pairing because a friend had told me the wines were not very good. We opted for the top wine pairings & were very pleased.
My husband & I decided to spend our fourth wedding anniversary in Quebec & found Tanière3. The entire dinner was amazing - the ambiance & entire staff are fantastic & the food is even better! The entire meal, but especially the locally sourced wagyu beef, was one of the best meals I've had. Absolutely get a wine pairing. I can't wait to return!
Is it high gastronomy? Theatre? Performance art? An otherworldly experience for the senses? Well yes, yes to all of the above! The mister had to convince me to take the leap because after all, it's a bit of a splurge & the menu is a complete secret, as it changes from day to day depending on ingredients available & vision of the chef(s), a constantly evolving & surprising process & journey. (Next time I REALLY want to meet that executive chef! & the art director...& about that secret drawer with the golden key...)
I can't praise this place enough, from the unbelievable dishes (15-20 courses) to the charming, professional & charismatic staff to the breathtaking interior designs (the experience progresses through different rooms) & the sublime wine pairing, just go & see for yourself, you deserve it.
Great experience & good food. We did not give a 5 star because we experienced it a bit as a rush. The dishes came really fast after each other & often we did not even finish our wine & we already got a new glass of wine for the new dish. We recommend to slow down & to make some more time to make a personal talk with the guests. However, a great experience & if you like a high quality dinner, go for it!
This is the best restaurant experience that we have ever had! A phenomenal tasting menu & we did the "Experience " wine pairing that we enjoyed. We would definitely return if we visit Quebec City in the future. One word best describes this restaurant...Amazing!
