About

Paillard operates as a high-volume bakery and café that specializes in traditional French artisanal techniques. The menu features an extensive selection of crusty baguettes, flaky croissants, and buttery pastries baked on-site throughout the day. Substantial sandwiches are crafted using house-made breads, frequently paired with hearty soups and crisp salads. The interior design emphasizes an industrial-chic aesthetic with high ceilings, exposed brick walls, and long communal tables designed for efficiency and rapid throughput. Guests order at a central counter where glass cases display an array of colorful macarons, tarts, and dense chocolate desserts. This establishment prioritizes the rapid production of quality wheat-based products within a bustling and utilitarian setting. It remains a central destination for those seeking authentic European-style baked goods served in a streamlined, self-service environment.

Review Summary

Paillard is widely recognized as a popular destination in Old Quebec for its extensive variety of fresh baked goods, including highly praised croissants, sandwiches, and assorted pastries. Many visitors appreciate the lively atmosphere, the ample seating, and the consistent quality of the food, making it a frequent stop for breakfast and lunch. While the bakery receives significant acclaim for its flavorful offerings and convenient location, opinions on the coffee and service are mixed. Some customers highlight friendly and efficient interactions, while others report occasional challenges with long wait times, busy crowds, and varying levels of staff attentiveness. Despite some concerns regarding pricing and service consistency, many guests consider the establishment an essential stop for anyone seeking an authentic bakery experience in the city.

This place has become an institution in Quebec City & I've always enjoyed visiting every time I come here. Sadly, after visiting this week it seems like it took a nose dive :-( The place was a mess. Dirty tables & chairs thrown around everywhere & garbage area was flooding with waste. It looked like they haven't cleaned the shop the whole day. There was a huge line up to order that moved very slowly. The place was clearly understaffed & the staff working didn't seem to care. The pastry I ordered was dry & cold & the warm drinks we ordered were ordinary tea & hot chocolate that was hugely marked up. As a business when people still show up to you in droves like that, you should take treat that as a blessing & go out of your way to keep their business not take them for granted like that. Huge fail.

The chocolate cake was very nice & rich. The crispy crust at the bottom was a nice contrast to the smooth chocolate layers. The chocolate almond croissant was also a nice treat, it would have been better warm so the chocolate filling would be slightly melted.

I tried the breakfast croissant & the chocolate croissant. I personally found the pastry too sweet. However, the breakfast croissant was so good! I will recommend people having brunch or light breakfast here. Please be reminded that there's always a long line-up (around 15-20mins wait).

Best looking pastries at the front of the case for visuals, worst ones served from the back of it after you order. Both baked goods we got (raspberry pastry & chocolate eclair) were both sickly sweet, & this is coming from an American palate.

This is an institution for a reason. Cafeteria style vibe but make it French classy. The combo (quiche + salad + a mini baked good) is just enough food for lunch & there's enough choice to make it worthwhile. Food is delicious & there are good healthy options too. But the pastries are where they really shine. This almondine with chocolate was the perfect light snack. They could use a bit of variety with their tea choices though...

Filter Coffee is not taste like coffee. Almond croissant is so sticky & taste like chocolate not as almond croissant. Not worth it at all!!

Lovely bakery that has yummy croissants!!! I tried two kind, plain & chocolate. I like plain one more! Crispy, buttery, not greasy. Even it was not the best croissant I have had, it was on top of my list. I could have one everyday if it doesn't have calories 🤣 & the opening hours were friendly, you could take it as breakfast or dessert after meals. Like us, we took one to have a picnic on the lawn in front of Fairmont Le Château Frontenac.
