About

Paillard operates as a high-volume bakery and café that specializes in traditional French artisanal techniques. The menu features an extensive selection of crusty baguettes, flaky croissants, and buttery pastries baked on-site throughout the day. Substantial sandwiches are crafted using house-made breads, frequently paired with hearty soups and crisp salads. The interior design emphasizes an industrial-chic aesthetic with high ceilings, exposed brick walls, and long communal tables designed for efficiency and rapid throughput. Guests order at a central counter where glass cases display an array of colorful macarons, tarts, and dense chocolate desserts. This establishment prioritizes the rapid production of quality wheat-based products within a bustling and utilitarian setting. It remains a central destination for those seeking authentic European-style baked goods served in a streamlined, self-service environment.

Review Summary

Paillard is widely recognized as a popular destination in Old Quebec for its extensive variety of fresh baked goods, including highly praised croissants, sandwiches, and assorted pastries. Many visitors appreciate the lively atmosphere, the ample seating, and the consistent quality of the food, making it a frequent stop for breakfast and lunch. While the bakery receives significant acclaim for its flavorful offerings and convenient location, opinions on the coffee and service are mixed. Some customers highlight friendly and efficient interactions, while others report occasional challenges with long wait times, busy crowds, and varying levels of staff attentiveness. Despite some concerns regarding pricing and service consistency, many guests consider the establishment an essential stop for anyone seeking an authentic bakery experience in the city.

The lower old town location was very close to our Airbnb & they became our breakfast & dessert standard! Pastries were delicious & fresh. Staff was helpful. Highly recommend the ham, cheese & egg croissant! Sweet pastries, especially with fresh berries were also a favorite for us. Came back from Ile d'Orleans one day with fresh cheese & decided to just make cheese, baguettes & wine our dinner, so we headed straight to Paillard, but they were closed so got our baguettes next door at the cafe just below Paillard (in case you need a back up!).

Nice little morning stop with the best breakfast sandwich on a croissant I have ever had.

Stumbled upon Paillard last weekend while hunting for good light in the old quarter, & I ended up staying way longer than planned. The morning sun through their front windows was honestly perfect for some interior shots, but I put the camera down long enough to enjoy a really solid almond croissant that was still warm from the oven. The space has this relaxed but lively energy that's hard to fake, & the staff were friendly without being over the top about it. If you're in Quebec City on a Sunday morning, this is exactly the kind of place you want to be sitting with a coffee.

Lots of choice. We had a croissant & cappuccino. It's just average. Nothing special.

Lots of other spots in town for fresh pastry. Service was nice but set up of having to interact over a glass case thats 6ft tall with more jam displayed on top is weird & uncomfortable. The croissant sandwiches were decent, our pastry was stale.

Our hotel concierge recommended Paillard to us.
We loved it & ended up going a few times during our visit. We tried their chocolate Suisse, chocolate braid, praline rolls, focaccia bread, macarons, butter croissant, chocolate croissant & coffee.
Everything except the coffee was yummy. I'd hop over to Smith Mason down the lane for coffee instead. But other than that, we loved everything. All their baked goods were freshly made.

Overpriced. Croissant was not good, & coffee gave me heart burn.

Worst part - I bought their $13 jam as a gift, only to find out it was all mouldy. Yuck ! Just go somewhere else !!
