About

Paillard operates as a high-volume bakery and café that specializes in traditional French artisanal techniques. The menu features an extensive selection of crusty baguettes, flaky croissants, and buttery pastries baked on-site throughout the day. Substantial sandwiches are crafted using house-made breads, frequently paired with hearty soups and crisp salads. The interior design emphasizes an industrial-chic aesthetic with high ceilings, exposed brick walls, and long communal tables designed for efficiency and rapid throughput. Guests order at a central counter where glass cases display an array of colorful macarons, tarts, and dense chocolate desserts. This establishment prioritizes the rapid production of quality wheat-based products within a bustling and utilitarian setting. It remains a central destination for those seeking authentic European-style baked goods served in a streamlined, self-service environment.

Review Summary

Paillard is widely recognized as a popular destination in the heart of Quebec City, frequently praised for its extensive selection of fresh, high-quality French pastries, artisanal breads, and satisfying breakfast sandwiches. Many visitors highlight the buttery, flaky texture of the croissants and the delicious flavor of items like the almond croissant and mushroom soup. The atmosphere is generally described as lively and welcoming, with ample seating that makes it a convenient spot for both small groups and families. While experiences can vary due to the high volume of customers and occasional service inconsistencies, many guests appreciate the professional and friendly staff who are often able to assist in both English and French. Despite some mixed feedback regarding coffee preparation and wait times during peak hours, it remains a go-to location for those seeking an authentic bakery experience in a beautiful, historic setting.

What happened to Paillard? Five years ago I stopped here & had the best croissant & egg breakfast. In fact, I returned three times. Today in August 2026 the croissant tasted like hamburger buns. The breakfast sandwich was dripping in unrecognizable sauce instead of butter. Paillard has fallen to the level of a fast food restaurant. Look at the difference in what was promised & what I received. Fresh fruit from a can ! big disappointment.

Très bonne place pour savourer un bon café, des croissants & des gâteaux au vieux Québec, la vue est magnifique & le personnel est très courtois.

Give this one a skip. Tourist trap! Almond croissant was soggy & cheese & ham croissant was very average. The cold drinks (matcha or espresso iced lattes) are extremely overpriced & not good at all. Rather go to Maison Smith

We just got croissants from them & they are soggy…the almond croissant was cold so probably refrigerated overnight. We went early so there is no excuse for this.

Pareciam antigos.
Nosso capuccino estava quase frio.
Os funcionários sao atenciosos e como era cedo, o serviço fois rápido.

Good Americano & a nice overall experience. The croissant, however, tasted fairly generic-I was expecting something a little better.

Déçu par la boulangerie paillard , les croissants jambon fromage sont très chers , les viennoiseries ont un goût industriels bref si vous cherchez une boulangerie artisanale passez votre chemin.

Got the croissant with ham. Utterly disgusting. Mostly sure its industrial pastry made with palm oil. No butter whatsoever.

I came first thing in the morning, & there was a man who looked like maybe a pastry chef or something working at the counter. He was pretty rude in my opinion & not very easy to understand if you don't speak French, but that is not the main problem with this place. If you are taking your pastries to go just to be aware that they do not know how to pack pastries properly when I open up the box this is what I saw. See attached photo.

He basically packed my pastries in a box & then put them in a bag, but because the bag is not big enough to hold a pastry box the correct way he just turned it to its side & handed it to me that way, & basically all my pastries were smooshed. The pastries themselves were also very short of remarkable. I've had better croissants at Costco & this was definitely not a comparison to a French bakery for sure.

The icing on the cake was that I had forgotten to ask for my receipt & so when I went back to ask for it instead of printing me a new one, the same pastry chef started looking in the trash for the receipt he threw out & then just handed me the receipt from the trash. It was the weirdest experience. I just felt like I shouldn't be there like I was inconveniencing him as a customer lol
