About

Paillard operates as a high-volume bakery and café that specializes in traditional French artisanal techniques. The menu features an extensive selection of crusty baguettes, flaky croissants, and buttery pastries baked on-site throughout the day. Substantial sandwiches are crafted using house-made breads, frequently paired with hearty soups and crisp salads. The interior design emphasizes an industrial-chic aesthetic with high ceilings, exposed brick walls, and long communal tables designed for efficiency and rapid throughput. Guests order at a central counter where glass cases display an array of colorful macarons, tarts, and dense chocolate desserts. This establishment prioritizes the rapid production of quality wheat-based products within a bustling and utilitarian setting. It remains a central destination for those seeking authentic European-style baked goods served in a streamlined, self-service environment.

Review Summary

Paillard is widely recognized as a popular destination in Old Quebec for its extensive variety of fresh baked goods, including highly praised croissants, sandwiches, and assorted pastries. Many visitors appreciate the lively atmosphere, the ample seating, and the consistent quality of the food, making it a frequent stop for breakfast and lunch. While the bakery receives significant acclaim for its flavorful offerings and convenient location, opinions on the coffee and service are mixed. Some customers highlight friendly and efficient interactions, while others report occasional challenges with long wait times, busy crowds, and varying levels of staff attentiveness. Despite some concerns regarding pricing and service consistency, many guests consider the establishment an essential stop for anyone seeking an authentic bakery experience in the city.

We went in to get mille-feuille, which was excellent. But what stood out was the service. We went in at noon & got some take away goodies, we opened the box in the evening only to realize that two of the pastries were missing. We told them about it & didn't really have a receipt, but the manager stepped in, & gave us the missing pastries at 6pm. It was a wonderful experience & we were very touched by the gesture.

Did a massive croissant taste test during my stay in Quebec, & these croissants were good but definitely not the best in the city. Massive space makes it easy to find a seat & rest your tired feet. Pastries are all above average & meals are reasonable in an expensive area in the city. See my other reviews for best pastries in Quebec City.

The pastries are wonderful & you can sit & relax here. The sandwich we got for the train ride home (Brie, apple slices, confiture de l'onion) was creative & delicious: I wish I'd gotten two!

Amazing pastry shop with a variety of options & friendly staff. We liked their croissant, Nutella eclair & a few other pastries.

Amazing breakfast spot! We tried it on our first day in Quebec & didn't want to go any where else after that! The staff are amazing, as are the pastries. Le Croissant Matin was my absolute favorite!

Went 2 days in a row. It's a casual atmosphere with large communal tables & plenty of seating. Pastries, quiche, chipotle chicken, roast beef sandwich were all excellent. Baguettes used for the sandwiches were amazing. Only thing I would say can be an improvement would be providing metal utensils instead of flimsy plastic ones. Hard to cut through the sandwiches. Cafe lattes were also really good.

The pastries were quite dry & staff are somewhat rude. Service is slow & the eating area looks crowded & not very clean.

lovely spot for croissants & other pastries. sandwiches are supremely overpriced but still good all things considered. chocolate croissant is okay but i've had better. the standout is the original croissant which was still good even two days after i bought it! in terms of service, the workers were mostly polite, just somewhat unorganized. the location is great & not too far from other food spots & some of the main tourist attractions.

Best Croissants in Quebec. We had one with ham & cheese. Loverly, tasty pastries. Order at the counter. Be sure & look at the written/ picture menu at regiter, it is not obvious everything they offer. If you don't speak French, look at menu. Friendly staff speak English. Outstanding quick lunch.
